Neverwinter Nights Series - Once you're done with the official campaign you get to create your own adventures or download them.
Baldur's Gate Series - Irenicus being voiced by David Warner (least in the version I played) holds a great rememberence for a villian in BG2. Touring virtual Baldur's Gate is nice too.
Icewind Dale Series - The great emphasis on dungeon crawl and combat for when I want something different.
Phantasy Star through Phantasy Star IV (Sega Genesis) - I kept replaying these over and over even though the Playstation was launching and skipped out most of that gen because of it.
Wizardy Series - And other games like them really particularly the Gold Box D&D Games like Eye of the Beholder series. Dungeon crawl elements true but yet sandboxy at the time. Games where you actually had to create your own maps and games we probably won't see again.
Final Fantasy Series - It came along and helped to revive these games to a different format. One more to feel like you're playing an interactive story.
There's too many to add but if you're going to only have one as a pick I'll plug Neverwinter Nights for the reason I listed above. Games have to last long in the end and have value.
My favorite singleplayer RPG at the moment is Final Fantasy 12 since that is the game I'm currently playing for the PS2. I really enjoy Marks hunting! The Rare Trophy collecting! I'm trying to find all the Rares out there!
The single player RPG I enjoyed the most was "Vampire Bloodlines". I haven't played to many in the last couple of years though. Most recently was NWN2 which I like for the toolset but thats it and Gothic 3 which I didn't care for to much. To be honest I would rather play a Shooter like "Bioshock" or an RTS like "World in Conflict" then a single player RPG.
Most of the time when I'm not playing the MMO flavor of the month I'm playing "BF2" with mods, ARMA or multiplayer something. SIngle player games are kinda bland without anyone to interact with.
I liked some of the older SNES games that I never got to experience. I played through them with an emulator for hours of countless fun. I was more of a pc rpg guy, and I liked the BG series and Fallout series the best out of the pc rpgs.

I'm suprised this one hasn't been listed already, but Dragon Warrior.
I liked Shining Force on the Sega Genesis as a kid. It was one of the first games I put long hours into, and was very well made for a 1993 game.
