I am pretty sure I am going to order WAR but am unable to choose what character to play. I usually go for the hybrids (red mage, druids, etc.). What is the closest to this in WAR or is there no specific one you either have to choose tank/healer/dps?

This is a good discussion on the subject. Though imo the best advice would be to try each class that is visually appealing to you to rank 8-10. At that point you can get a pretty good feel on how the class plays.
Starting levels go really fast in this game so you won't spend too much time trying things out.
War is going to change your entire perspective. Characters aren't necessarily going to play like conventional MMO characters. A Warrior Priest isn't a Paladin for example, an Engineer is a ranged DPS, but isn't a Ranger, you can't necessarily draw on similarities. The way the game plays and the very nuances of how you would play a standard character is different as your fights are more spontaneous and end quickly, you're either dead or engaging your next target.
I'll be interested to hear what you think about the starting zones as they are practically deserted.

Plenty of those. You've got the melee/healer hybrids Warrior Priest (Order) and Disciple of Khain (Destro) and the ranged healer hybrid classes (with some dps/dots) Archmage (order) and Shaman (Destro).
Warrior Priests and DoK's are tough cookies which resemble WoW's Paladin's in a way while the ranged healer dps classes are more closer to WOW's druids. These are mirrored classes but their mechanics are very different however and difer from class to class.
I tried a WP up to level 10ish and had some fun with him (pretty soon found out that the crucial thing is knowing when to jump into the fray and when to stay out).
My main is a lvl 28 Shammy and I love it. Easily the best healer in a scenario and some nice extra debuffs and buffs to help your friends out. DPS is not that fantastic but your healing will save the day often. Besides, what is there not to love about being a goblin and getting to ride a wolf?
