I will echo what the others have said. Lord of the Rings Online is without doubt the game to play for an explorer, especially in a pve setting. I like to explore in MMO's myself, and with Mines of Moria just about to be released, it is like an explorer's wet dream! A vast underground environment, full of mystery and secrets to unravel. Can't wait to see how Turbine have portrayed it, and what lies in wait in these vast halls.
To put it in perspective, seeing as you are also a WoW -vet, like myself also, it will be like exploring an underground dungeon-type environment the size of one of Azeroth's continents. (In gaming space that is).
Also, it is has some stunning visuals, much more pleasing to the eye than WoW, so you get a much greater feeling of immersion.
And if you have fully explored all of the above ground land-mass, and Moria, then there is also the extra content that they bring out every few months, often with extra areas. And they plan to follow the story of the books with future expansions, so bear in mind that we are only at Moria (only half-way through the first of Tolkien's trilogy), then it put's it into perspective what the eventual size of the game will be. Should keep all exporer's happy for a while.

Visually splendid, with lots of details from the book (petrified Trolls suprised by the sun with birdnests on their shoulders!) and other imagined by good old Turbine, you could just feel like wandering because it's one of these rare mmorpgs where travel matters as much as the goal (check the book it's so much about travelling). Different weathers, day/night successions, sun/moonsets, lots of details, beautiful rich textures, trees, water, breathtaking sceneries.
On the top of it there's a profession (forgot the name) where you can improve by finding relics in ruins scattered all over middle-earth (oftentimes plagued by evil creatures), this gives a real sense to exploration and makes you feel how ancient and alive middle-earth was/is.
Eq2 is worth a try, they have a free trial. Huge game with a lot of content, only warning is that you should play it on a US server, the EU servers lagg (you choose that when you start the game).
Lotro as the guys above said is ok too but I prefer EQ2 myself, try both at a free trial and see which one you that is more your style.
Final Fantasy XI is older model, but if youre looking for a good community and a place where teamwork is necessary, this is one of the best PvEs out. They have a trial you can try for a few levels, but the strength (weakness depending on some) is the game is heavily dependant of grouping. Unless you roll a Beastmaster, you gonna have a long road. There is plenty to do in there though: crafting, exploring, some small form of Pvp if you get bored, but its all about the PvE experience.
If you don't like grinding, and don't like grouping, then you can play LOTRO. This game has great graphics and the storyline is pretty good to follow along and you can Solo, solo, solo if you want. You only have to group once in awhile to do the chapters (which are instanced dungeon type stuff) so you don't really need a guild if you aren't social. But its a good game to play.
Everquest 2 is fun, completely soloable with lots of stuff to do and see. Good crafting and if you max your character, SOE allows you to sell your character when you are tired of playing it. ( I sold my Inquistor for 200 bucks, Sony took 10%) so your gameplay is free by the time you are done.
Vanguard is also a PvE HEAVY game that will require a bigger computer than the 3 above. It has a small community cause they released it too early, and turned off too many people. But people are returning back to Vanguard now which says 2 things: 1. The market for PvE is pretty bad right now and 2. Vanguard fixed a LOT of stuff up. This one also has a trial version.
If you liked WoW, Id say the best one of the 3 above would be Everquest2. Lots to do like WoW, plenty of classes to play and crafting. Easy to play as well.

You could give Lord of the Rings a shot with the new expansion coming soon. It would be a good time to start that game.
Also, although Vanguard failed miserably, the game itself has gotten alot better as of late. The PvE in that game is very nice.
i think the game for you is LOTRO. Its a pve game with REWARDING exploration, cause of the Deed system try it out!
