Playing the trial right now and I must say so far it's been quite fun. I was just wondering if someone could give me some insight on the end game crafting. Is it challenging? Do the items made from high end recipes actually compete with the end game raiding items, and are they profitable to make?

Define challenging? Finding crit components, and shards can be tough or just require a lot of persistance and luck. After that it is having good equipment, putting it in a bag and crossing the fingers hoping for a crit. It is not SWG challenging where you had to really scrounge for the best resources or original EQII where you had to really pay attention during the crafting process.
Compete yes yes and yes. Most raid armor is pretty speacialized and not all that great for daily wear. Great for some things, but not as good as crafted for daily use. Both of my 50's are in 80% crafted 20% drop gear, jewery, weapons, my little lvl 16 alt is in 100% crafted armor using a quest reward bow.
Yes, higher level stuff sells for a good coin. Lower level stuff ( teir 1 and tier 2) just is not worn long enough in my opinion for to put a lot of effort into. Tier 3 will last a bit longer and tier 4 and 5 gear sells well. I see quite a bit of tier 2 and tier 3 gear on the AH, but I dunno how well it sells. With the Moria expansion they will add tier 6 and also crafting guilds and legendaries which will further buff up the crafting.

Crafting is a GRIND. To master a craft requires lots and lots of resource gathering. Hours and hours of resource gathering. Of course, you do a lot of this while questing so it's not so bad. Not only does it require time but also you will probably need to buy certain ingredients from the AH and vendors, and can also speed up your mastery by buying resources from the AH. But as pointed out, the light of the end of the tunnel is creating high quality gear with high demand that sells well.
IMO the most interesting thing about crafting is the various markets it creates. Markets for raw resources, recipes, shards, critical success items, crafting tools, and of course, the finished goods... There are opportunities to buy and sell and make money in all of these areas. I can't wait to see what happens on the T6 marketplace when Moria comes out... I don't think anyone is prepared for the insane demand for ore and the prices that will comes along with it!

back to topic though, yeah crafting is a grind. to me efveryting in MMOs is a grind of a sort, it is just a question of whether the grind is fun or not.
That is one of the reasons why being in a good kinship makes or breaks a game for you. Lots of time my kinmates and I will be in six different areas all gathering and for a fellowship just to have the voice chat and talk about the game, sports, politics or whatever. makes the grind a lot more palatable. That reminds me I am running late for the ingame coffee klatch and I need to gather more wood.
