With the job system of FFXI you really don't need to worry too much about a starting job. You can start off with any of the six jobs:
Once one of these jobs reaches level 30 then you can start unlocking the other jobs. What is probably best is the pick an advanced job and match that with one of the starting jobs. For instance if you really wanted to play Paladin (PLD) I would not suggest getting BLM to 30 to unlock it because you are very unlikely to run PLD/BLM ... in fact you'd probably get laughed at. In the case of wanting a PLD I'd say go with WAR to start with as WAR is an almost exclusive sub for PLD.
Something to be said about the system as well. Because you can change your jobs you never really have to worry about second and third characters so you can sample everything and level all jobs if you want to. I have over 900 levels on my main character and I and switch in and out of jobs as I see fit to.
Starting out if you wanted a blanket job to start with i'd go with WHM. You can always use a healer and WHM is the primo healer job. Also at 20 WHM get Sneak and 25 it gets Invisible which are two spells that will really help you out a lot in getting the advanced jobs.
As far as what jobs are needed most. Jobs are set into classes: Tanks, Healer, Pullers, Melee DD, Magic DD, Debuffs, Refresher, Buffs and Pets. Every class is needed, but you will see the problem in a sec:
Problem ... lost of people are competeing for the Melee DD roles in parties these are the jobs which can either be extrememly fast to level or extremely slow based on your A) skill and notroiety competition at playtime. Problem with pet jobs is people just assume that since you have a pet with you that you can solo, while in most cases it is true, efficency is reach in a party with everyone else.
If you want a job that is alwasy in demand you can go for a Tank, Healer, or Refresher. If you are looking for a job that you are going to enjoy, do a little research or play a little and test it out. I have to say that the jobs won't get that differnt until at least 25 and they will hit their prime lvl 50+
As far as jobs, you have to start as one of the original six, and from there you can go on to unlock the other 14, after you reach lvl 30. Depending on which route you want to take, I would recommend Warrior if you're going melee, just to have it as a viable sub job for the other jobs you can unlock. If you're going mage, I would recommend Red Mage. It is the "weakest" of the mage classes, as it mostly deals with debuffs, but you'll find you will still get party's faster than blm, and while waiting for party's have the ability to solo. End-game it is one of the best solo jobs as well. Aside from that, really just play whatever job you want to play. Most jobs all have their role in the game, and find something you like, stick to it, and excel at it.
Everyone panders to their own server. I'm on Caitsith, Vail or Zephyrr (dual box), and we have a pretty strong population, usually 2400+ during peak times either JP or NA, and during "off" times sitting at 16-1900. There are a lot of good servers out there, almost everyone is still friendly to new players. I say that with a grain of salt though, if you're willing to learn from their advice, they are friendly, if you are in general noob-tastic, and don't listen to criticism or how to play your job, you will be regarded with much disdain.
Anyhow, I hope you enjoy the game.
DNC can be everything and a soloer.
They can debuff, Heal, buff and also tank.
At end game, they have 2 new abilities that allow them to either do alot dmg or tank.
Fan dance make you migrate 90% and -10% for every successful attacks recast is 5 min (can reduce to 2:30).
Not to mention, evasion is Second to THF (meaning they have higher evasion then ninja). Can also /sub Nin
Also they have walz 3 (heals 380-450) and Waltz V heals 880-950) which function as a double Cure IV of pld (if use with fan dance it gives +14 emity)
Making them very good as a "tank" job. However, they never get groups .... worser then SMN.

I am going out on a limb here and offering what i think is useful advice. If you really do not understand FFXI are pretty much a total noob, then try a BLM.He is very hard to solo the first 10 levels, but you will learn alot i hope, and is sort of an easy job to play once hit parties in the dunes at level 10/11/12/13.Quite often a BLM is the ONLY one that can do damage on some mobs,so you could be the life saver, heck the early dunes parties of old ,begged for 3x blm if they could get it,it meant smooth sailing through the dunes.
I have a reason for mentioning BLM lol.You wil llearn about over damage or over nuking as you will get attacked, good way to control your playing. The most important part is it also allows you to side heal. You cannot heal until you get level 18 and your subjob, witch will of course be a whm for the blm/whm setup.Main healing i think is hard for a new player, they don't understand macros, maybe panic when a fly spews posion and the whole party is redlined lol,but this way it eases you into the healers role by helping out.It is always nice to have that added heal their if your main healer runs dry because the fight was too hard.
BLM can also be useful in many situations like warp/escape/sleep,ELEMENTAL seal means great chance to stick the spell, very strong nukes once get ancient magic, and many BLM can and do solo come that same time by killing PETS,so you do not always need that downtime looking for a group.Once you get your blm to level 75 he can also teleport via your sub job to 3 crags,so no need to change jobs for tele.
BLM can be very useful in many BCNM's as well, witch are special fights to gain items.
Never forget 3 mile Island and never trust a government official or company spokesman.
I wouldn't be concerned about the job that gets invites the easiest. I'd go with what you'd like to play more. Do you like to tank, heal, enfeeble, or do damage? Pick based on what you'd like to do. Same with race and all that.
Since I've only been on Kujata, I can only speak for that server. Has a decent population with a decent amount of newer players and such. Usually, people are don't mind helping the new people, like me. If you happen to choose Kujata, let me know.
To be the best, you must help each other become the best.
FFXI Character: Satimasu
FFXI Server: Valefor
FFXIV Character: Tamorae Fonteil
Like Wizardry, I also think that BLM (black mage) is an excellent choice as a first focus job. Play WHM (white mage) first, as healers are needed the most at early levels - especially in Valkurm Dunes. You can experience keeping a party alive as main healer early on and moderate aggro control.
Once you reach level 18, you can unlock subjobs and start as BLM with WHM sub. You can still heal and will still be needed at early levels. You also get the chance to experience dealing massive damage and get even better with aggro control. In the end, BLM/WHM become extreme both for parties and yourself.
One mistaken most FFXI starter consider is that
" I am going to be RDM/PUP!" kind of thinking, I am sorry to say but once you play this game your sub will be influence by the mindset of FFXI. RDM/nin? No it doesn't works. Unless you are a billionaire with alot gil to build the armors, otherwise rdm/nin is very unacceptances for most thing a RDM does.
You can try solo with it, it doesn't work that well, i can tell you before hand.
I never understand why rdm usually refuse to /whm either. I have many instances where the group wipe and everyone eat a 3k xp loss due to homepoint (i usually bring reraise myself) because RDM/BLM ..no reraise!
Its not like /blm have anything "special" for RDM beside converse MP , sleepga, ES, aspir (which you only get 30 mp usually) and WARP (guess most rdm are lazy )

Most needed job is BLM.
But unless you know what you're doing and have decent gear it might be difficult leveling 55+. If you want an easier time finding parties you might want to try RDM or BRD instead. Less useful than BLM but still good and faster party invites.
By useful I'm assuming you meant useful for end-game stuff. If you're doing FF11 for the leveling then of course it's should be less what's useful and more what you enjoy playing.
