EVE like others have said is a pretty good choice if you can handle the type of game it is. You may enjoy DDO, or LotRO and both have trials to check out. EQ2 on Antonia Bayle is a great choice. Otherwise you will have to wait like all of us and hope that the next year brings something magical.
I am what you would call a "mature" gamer who has been playing WoW for several years. I played UO, EQ1 and Asheron's Call before that. I do remember life before Pong...I think. Are there any robust PVE games other than WOW that would interest an older player? I love PvE and difficult end game content that require stratgey over boring zergfests. I don't care for PvP since at my age my twitch skills are lol!. I like crafting, if craftable items are actually of value, and theorycrafting. Most of all, I am looking for a game with a mature community and with stable guilds interested in progression. Any hope of there being anything out there besides WoW?

I too am a "mature" gamer. One that remembers the Beatles before they broke up! I grew up playing out doors and creating imaginary foes and allies. The "Baby Boomer" generation was the FIRST of the video gamers, but we also developed a strong sense of imagination mainly due to the fact that TV, back in the day, only had a couple of stations to watch, therefore we spent time out doors with our friends, mostly playing football, basketball, or baseball. There was NO video games or cable TV in the 1960's!
Now, I am not here to start any kind of an argument...LOL! I am just agreeing and going to add a thought here about those of us in the "Baby Boomer" generation that are MMO gamers.
I have a feeling that within the next 5 to 10 years many of my generation will begin retiring from their careers. My guild in WoW has a half dozen members within this category. One of the aspects of gaming in the future may be one that fits the life-style of a rapidly, but unseen group of us folks on the cusp of retirement. I believe developers should take a survey and count the numbers of us playing their games. They possibly should take into consideration our style of play as they develop games in the future. There will be more that you think playing MMOs in the upcoming years. We generally don't play MMO's quite the same way that college students do, I assure you. I predict that at least one of the major gaming companies will actually see this as they create their future games.
I shall create a thread specific to this topic at a later date and look forward to those of us that remember Saturdays and viewing old episodes of the "Lone Ranger"! Hahahahaha...truly I do believe this could be a topic of interesting banter.

Have you tried Saga of Ryzom. Its a sandbox with excellent Crafting and gathering system.
Combat is actually interesting since you can customize every spell and since there are no classes you cna make a jack of all trades type of character with just a gear switch.
Ryzom has these high skill level raid encounters within these zones called Kitin lairs. They are very challenging and the mobs drop rare crafting patterns.
Ryzom also has a Event team were a Spiderweb employee will actually take control of a famous lore character and go on an adventure with the entire server. these event can last a couple hours or streach into chapters that lasts days or weeks.
The Ryzom, community is very mature. its a tight knit community that is very helpful and down to earth.
While the game does have faction and gvg pvp its totally optional and the majority of the community enjoys the pve more.
I would be playing Ryzom myself if I wasn't totally addicted to Eve online.
The wow community isnt immature, since there are no children playing it. Its a game for geniuses and masterminds, all at least 18years old. People without a sense for quality are playing other mmos, wow is just played by gods.
Amazing the amount of comments on this topic. I am an 'old' gamer too (over 50). My first MMO was SWG back at launch and I lived and died through the mess SOE made it but there was a lot I liked about the game and still do so I come back to it every so often. Its got space and ground content and keeps me entertained. It also has helped that they have consolidated the servers now and there is a decent population again.
I have played CoX and LOTRO and enjoyed both for the most part. LOTRO is fun up to about level 30-40 but then the constant agro travelling and running out of solo content makes PvE really poor. Trying to get groups to run quests is hit or miss and sometimes takes more time than I have waiting for people to gather so I usually log out after a half hour or start a new character for something to do. CoX is fun but repeats the same kind of thing too much for solo PvE.
I am now playing WoW and trying to look past the Warner Brothers cartoon graphics. I expect to see Bugs Bunny or Wile E. Coyote at any moment. I decided to give it a solid couple months of playing before I give my final opinion but so far going into month 2, I don't think its going to keep me.
I am now looking forward to see how SWTOR and STO turn out. To all us old first generation gamers, rock on!
You could try EVE. At 31, I still play WoW. Most of my friends are still there, and I can always find something fun to do in the 10-15 hours a week I have available to spend playing MMO's; but I wasn't playing WoW, I'd definately be playing EVE. The innovation is fantastic.
I would have to warn you against EVE. I played for almost a year, but finally had to quit. It is a good game, but I could only take so much adolescent corporation drama.

I'm a 63 year old gamer,,Someone said older gamer's prefer to play card games...I sure don't....I believe that when we become to old to play that is when old age kicks in..Playing keeps me feeling young even though my body may feel old!
I would say that DDO has one of the most mature gaming communities that I have experienced. There is a free trial and worth a shot. I've been back for a month and I have only teamed with one kid. It is a nitch game so it's not for everyone but if you like char customization there isn't a better game imo.

You might be interested in Final Fantasy XI. It's getting a bit long in the tooth, but it's still very nice for anyone looking for challenging (but not twitch) PvE. The community is also one of the the more mature.
Eve is fun if you are ok with just being a pilot. I think it is a great game, but I can't sink into it. also, there is definitly corp drama if you are in that kind of corp.
I say give AC another try. the population is incredibly low, but there is a global chat channel now, and the PvE servers are full of great gamers. Solclaim and Harvestgain are two that i have played recently, and they have great communities. Darktide is stil Darktide. I still love the server, but find myself turning off the global chat just about every night. It is the best PvP game on the market, period. Since you are into PvE, try Harvestgain.

I've more or less tried all MMO's thats came out over the years. I've only stuck it out in a handful of them for more then a year. I played UO for a year...Everquest for 5+ years,WoW,EQ2,DAOC,CoX and Anarchy Online for multiple years but I quit and resubscribed many times.
Currently I'm Playing EQ2...it seems to have the best community and offers the most of what I look for in a MMO. But I got my eye on a few to try out when they are released. Star Wars and DCUO. I'm in Champion's Beta...so depending on how that turns out maybe will be playing it.
EvE: This game very much centers around strategic warfare with player organizations being able to conquer and hold large swaths of territory. If that's your cup of tea, and you don't mind a space game, try this out. The entire economy is player-driven, with a few exceptions (you can do NPC missions, if you want).
Vanguard: Think WoW if they had focused all of their attention into deepening the depth of the PvE subsystems. Crafting, etc. here is much more in-depth. The world is also far more expansive, though that can be both a good and bad thing.
EQ2: I really wouldn't bother with this, but I'm going to throw it out there. I'd honestly say its PvE is about the same as WoW, in terms of overall quality. For a while, I thought EQ2 had some serious promise. They recently added a cash shop and some other stuff. Then again, you might actually like the cash shop. They don't sell god items, but they do sell XP items which help new players advance faster.
FFXI: This game involves a mind-numbing amount of grind to get to higher levels, and this may drive you off. That said, there is _always_ a progression goal to chase after in this game. Even talking about crafting or side professions, there is always room for advancement until you've played for a _significant_ amount of time. So some good and bad here. That said, its super high-end PvE content is insane, the final bosses especially. Think if the original Naxx in Vanilla was 100 man, and it took twenty hours to down him.
What else . . . Oh.
Saga of Ryzom: This game is a very interesting one. It's honestly unlike any other game. It's a very community-driven, sandbox type of title. The entry barriers are high to Ryzom, but those entry barriers are mostly knowledge-based, not grind-based. A lot of things aren't really fleshed-out, either. Combat isn't so great. PvE "content" is fairly insignificant. I meant it when I said community-driven. This one is either love or hate. If Ryzom actually comes back from its grave, then I might consider trying it. For now, stay away. This is the second time the game has died, and looking at the money trail as to how it's being resurrected, this may get ugly.
they way i look at the thempark fantasy mmos (which are basically all the same) :
at lvl 1 you get on a wheel and you start chasing gear, running quests. spin spin spin till you get to max level ....and quest for more gear. Every "AAA" (imho piece of crap mmo) offers the same task driven content that is meant to be played like a themepark ride.
Thats an ok passtime I guess, maybe you're into that.....but its not what UO and even EQ were originally about. Damn half of you probably dont even know what a good game is because you werent old enough. The environment was teh back drop.
Eve is different because its a skill based game, requires you to use your brain a lot more to survive and is a living breathing universe that is based ultimately on player actions.
The one draw back from eve is it can be hard to draw the line between I just wanna game for a couple hours and the intensity the game sometimes presents.....like when living in 00 for example, you can't really put your guard down for one second.

I actually love playing WoW and always heard there were older guilds made up of people with jobs and families but unfortunatly I only run across guilds run by 20 year olds with anger managment isssues. I am a woman btw and it is hard to put up with that nonsense. I have played with some very bright kids but was wondering where are you old WOW players at?
I tried and liked LoTR but I am not into the lore at all. I have no idea who Froddo is and really don't care.
Eve I heard is best left to the hardcore folks.

My experience with MMOs is that the LARGER the population.....the more jerks can be found. The smaller the MMO, the nicer the people. Apparently asshats aren't as attracted to games that they don't have a LARGE audience in for their "asshattery," pure and simple.
Well at 43 I consider myself mature (at least age wise, I like to feed my inner child, or is it my inner child feeding my outer child), I am currently playing DDO as the only MMO that can meet my need for complex builds and unique questing.
I enjoyed CoX for quite a while, the community was top-notch but the MMO is a bit shallow on builds (not what you look like, what you can do) and mission variety. Plus I hated being hit by projectiles through walls *growls*.

Like i have posted before,unsure if the OP has played them like me but i started out with D&D Games in the 70's while in High School ,MUD's on a Commador 64.To the MMORPG Genre i have Played Meridian59,EQ,AC,AO,Shadowbane,EQ2,Horizons,Vanguard,WOW,unfortunately also tried out and wasted my time on DnL. UGH! sorry DnL flashback.

You are gonna find a few mature players in every game but Vanguard is by the far the most mature community of players I have came accross. I have played FF XI, DAOC,EQ1,EQ2,WOW,Auto Assault, WOW,Vanguard,LOTRO,WAR, Eve, 2moons,9dragons,SWG,AOC,DDO,AO,Archlord,GW,Istaria,Lineage 2,POTBS,Planetside,Ryzom,and Shadowbane. Only reason I am telling you what I have played is to show you how many mmo's I tried and by far Vanguard will offer you the best mature community in my opinion.

When ROSE used to be P2P, almost all of the players were mature and/or adults. They recently went F2P again, and it's overrun by kiddies sadly.
