There are guildcities in the world and you can mess around with those cities in the borderlands. Right now the bordelands are packed with PvP. They fight over the PvP resources and control of that land. AoC has world PvP, so there is PvP in every part of the world. The murdersystem control the consequences depending of who you attack. If you attack low level players you get murder points and will eventually become a outcast. You get PvP XP on every kill and can gain PvP levels which again will give you access to the PvP level specific gear... It's prtty well eveolved and complex
I see there are sieges (from videos). Are these instanced? Are they guild cities out in the world? Any other non instanced PVP?
There are the pvp minigames which are instanced, they are pretty much the same thing as wow's battlegrounds.
While these are fun, the real fun is world pvp. On pve servers this is limited to the border kingdoms, but on pvp servers it's free for all anywhere but in the main cities, there are guards around quest hubs and villages but you still be killed anywhere. Most of the high level pvp takes place in either Kesh or in the borderlands, where guilds fights over pvp resources, which are used to build and repair battle keeps.
Battle keeps are instanced 48 vs 48 guild battles, the defending guild set ups a time where another guild will be able to attack, if a guild signs up there will be a battle at said time. The guild that wins has the battle keep.This is the good stuff with mounted combat and you can use your rhino or mammoth mount to destroy walls and parts of the keep.
Also there is city building, which isn't directly related to pvp, but having a pvp or pve city gives you different kind of buffs. Guild cities are instanced too.
Instanced PvP content like sieges and minigames are not that popular because they are boring which is a real shame because I was looking for some good instance PvP action.
Just make sure you roll a necromancer, put some points to your hiding/sneaking skill, summon a horde of pets and let them kill your enemies while you laugh in stealth. Not sure if they've already done something to the matter, that's just how I annoyed other players when I felt like exploiting the system.
Wish I could have saved all the angry PMs I got. Some people are so funny when they realise "oh shit, I think the class I chose to level suxx now."

Sieges occur in the Border Kingdoms.
There are 3 regions, in these regions which are large and instanced the sieges take place and guild can vie for the area's to build them which are set area's. On a PvP server any other zone is open pvp, with safe area's being cities or around guards (for the most part).
In game the UI was updated so people can check out what sieges are planned and going on. There are certain timeframes that your "Battlekeep" becomes vunerable for attack. I suggest a bit further reading on the main homepage for AoC for full break down.
Sieges are a regular occurance across most servers. On Cimmeria Server for example here is a snapshot of the next 48hrs taken just for each of the 3 area's.

As you can see on the main server I play on there are usually 3 a day. On other servers I play on it is about the same. They often get maxed out 48vs48. These are vunerabilty windows which get filled fast.

Guilds can set their vunerability window so you never know who will show up to attack. This is only mid week too. Far crazier in my experience weekends.
There are 100's of guilds for example on these servers which have designs on the limited plots. Dozens that team up and join forces too.
You won't find this level of activity yet on the fresh start servers as it takes a while to build them up as is all crafted by hand.
Guilds can chose when to have vunerability period next after a siege too, so this is why the weekend slots aren't full yet and you usually see 2 days out.
Moral of story don't believe that people who don't play who tell you they are not popular. They are not perfect and suffer from bugs, but very playable and very much fun as you can see from the videos out there.
