I played EQ on a blue server for about a year or so, and just came back after about a year and a half. Returning to the blue server I was on previously, I found I lost interest again quickly. I switched to Sullon Zek to try out PvP.
So far I've only been PKed once (rather, several times in a row by the same 60+ on a rampage) and PKed someone else once, but those experiences were more exciting than anything I'd ever dealt with on the blue server! It's like fighting mobs with a brain instead of the usual scripted aggros. Sullon Zek splits players up into teams based on deity alliance, or "Good", "Evil", and "Neutral", which is the closest thing they've got to simulating a classic Good and Evil struggle. There are people who are there for you to fight, and those who will back you up, or at least leave you alone. So far it's pretty cool.

The best pvp server is Tallon Zek. But only if you really love pvp and are ruthless. Starting out as a noob though on a pvp server is kind of difficult because everyone and their mother twinks the shit out of their low level toons. As you get 60+ it's all about what guild you join to stay on the top of the food chain. My guild was in the top 4 pvp guilds, allied with the #1 pvp guild on the server but we eventually broke the alliance and collapsed(woopdy doo). But if you ask me now it's not even worth starting everquest at all.
