I've played my share of MMOs like WoW, DAoC, CoH/CoV, Everquest, and Runes of Magic. I was thinking of trying out this game, but is it just another MMO with repetitive quests and grinding? Which other MMO is this game most similar to?

They have changed a lot since I last played this game. That said I still find this the funnest game I have ever played. There is A LOT of grinding since that is the only way to level up in game (unless changed) and quests do not give you experience. The quests also had you do stuff other than follow an arrow to finish them, it was very nice. The crafting system is still my favorite. Also very group oriented, they have made it a lot more solo friendly since then though, but still very group oriented.
I wouldn't say this is similiar to any mmo out there, at least I can't think of any off the top of my head right now that are similiar.
Should definately try out the trial at least, seen it at Gamestop.
I thought the crafting in this game was stupid...
Well it was the thing where you needed a buff to get the crystals, and you couldn't get the crystals off of gray con mobs.
Outside that I didn't mind the crafting system.

Yea you really can't compare FFXI with any other MMO.
It has quests but they are few and far between.
It's mostly a group grind game... where you team up, and camp an area near a spawn point, and chat during the down time.
It's the Social aspect that keeps people playing this.
Problem was back when I played they didn't have Level sync, or any that other stuff...
Finding a group back then at 7am EST wasn't easy.
Because level-sync wasn't in place, high-level played wouldn't team with low level players.
I left the game with utter hate for it and was jaded against group only games, but that isn't to say I didn't have fun with it, in the 3 months I played.
Try the trail you may like it.
Depends on what your idea of fun is. It's fun for me.

Good tip of advice: To level in this game make sure you have one or two friends to help you, but in my opinion I found this game fun. Chocobo raising, mog house decorating and ff story
I loved the game back in the day, wish I never left it. But I do have to say it's a hard one to get into now, just not enough low level folks around to meet anyone when I tried playing again recently. FFXI is pretty dependent on groups, so it was slower paced then it was back in the release days. I'm not making the same mistake when ffxiv comes out, if I like it I'm cutting off other MMOs.
This game is OK when you start out, but gets even better.. You are severely handicapped at the beginning. For example, you have to walk everywhere, you are limited to 6 classes out of the 20 total, and you can't really do any of the fun stuff like Burning Circle's (boss battles). The only thing you can really do at low levels is solo which is boring. After a few hours you get to party which really raises the fun-meter, and the game constantly rewards you with new things like Chocobos, Airships, BC's, new classes, and other things. So to make it short: It's not too fun at the beggining, but gets better the more time you put in it.
The controls are difficult so it is highly suggested that you check the tutorial before even trying the game out..when I first tried it, I was totally lost and couldn't even figure out how to do anything! But after the tutorials and finding the right keys and all that, I was able to play it. For its age, it has some good stuff but its still lacking in some areas. There aren't as many people on the servers as before but they are there, just not in the beginning areas. Overall it is just a very different experience comparing to other popular MMO'S that you probably have played such as WOW, EQ1&2, really anything else is pretty different comparing to this....

It's a fun game if ya don't let the grind get to you, and I emphasize game. There is a large part of the community who takes this game as a lifestyle or full time career. All and all tho its a fun experience once you scratch the surface , learn the steep curve and find a few good people to play with. My only other gripe really would be the cookie cutter mentality of the community and limited "acceptance" of gear (ie. 6 DD wearing a KO and and O-hat) , tho maby thats just me I like uniqueness.
The entire game is definately unique when compared to any other mmos. As for the cookie cutter aspect it's just normal for one item to be better for one class than other items. That's not to say you can't come up with your own ideas and play them out. I played FFXI for 6 years my main was MNK all mnks wore shura togi then they said Osode was better then they said osode for ws then togi for ws. They said STR others said ACC people played differently though some armor was staple I've seen the same thing in all mmo's ive played. The game itself is unique unlike the wow cookie-cutters out there with the same HUD, crafting style, and pvp ganking. In short if you're looking for a different style mmo from what's conventionally available and lean more towards PVE then you should definately at least check out the trial.
