Beginning my journey in FFXI.

I just bought FFXI, and a friend and I are going to start playing it. Just him and I will be in our party thoughout the whole game... does anyone think it possible to get through the game with only two characters?
When I start, I plan on starting as a MNK/THF and later on change to DRG/DKN... oh, one more question. Is it possible to double class as to extra jobs?

2 extra jobs eh, never thought of that, wait yes i have hehe, im pretty sure you can
well.... you can do it with 2 chars but then one of them needs to be a healer and the other oen a tank... But it wont be easy.
In the end you will probaly have to join a full party if you want good exp, or else. it will get slow
