I saw someone else post that you can change sides at any time in EQ2. Does that mean any level as well? How bout any class/race? Does anyone know for sure?
You can only change sides once, you have to be atleast lvl 16 but can NOT of completed your subclass quest. If you do or take the subclass quest you can't betray. Its a one time only deal, seeing as most places don't take traitor's back. Plus if you want to be a class that is city specific you either cant or have to depending on that as well.

So what if I make a Troll fighter>crusader and I betray at lvl 18, can I still become a Shadowknight once I am in Qeynos and level 20? Or is my only subclass choice a paladin because I am in Qeynos.
You can do the betrayal anytime before you have choosen your last subclass.
In essence this means before lvl 20, I am not sure but I think lvl 15 is the min were you can take the quest. But completing it is a horrid experience, allthough very cool from what I hear.
One of the steps is to walk/run from queynos to freeport or the other way around, and that is NO walk in the park, once there you need to either slay 500 orc or gnolls. There is more to it even..

you can only be the subclass(es) avalidable in your city after you betray or just do it normal (stick with starting city); so a troll who is in Qeynos can't be a Shadowknigt

No, you can't. You can do a betrayal quest, at, I think max level 18 min level 16, and its very hard. I think you misunderstood the person.
