Well, there's a couple of different reasons why people would play it. Really, the Republic and Sith are 2 opposite ends of an idealogical spectrum; It's not necessarily good vs evil.

I think if u read the books they pretty much put to rest the good vs evil stuff themselves. They pointed out that it wasnt the dark side that was evil but the person weilding tht power. We saw it brought up alot in the darth caedus books. So being sith doesnt make u evil its what u do with your power that makes u good or evil.
Lets start with i wanna play an evil sith. One who does as much darkside as possible I personally will get alot of pleasure from that. Being able to forget about morals and whats right or wrong and do whatever is fun.
Also Who says passion and love and all those emotions the jedi forgo are bad? The sith just use the emotions to fuel there power. The jedi forgo all emotion. Id say having no emotion is worse then using your emotions to fuel your abilities.
That said how u go about things determines if u are good or evil not light or dark.
Humans aren't very complex animals. We have all these urges, and we pick and choose which urges to follow usually based on what best (or most easily) ensures our survival. Which is usually an extension of what we are taught and what we observe.
However, the more curious of us wonder what we would experience if we were to choose the other way to survive. In a game you can do that, with the only casualty being your conscience, if at all.
In short, I don't necessarily play to feel good. I play to experience.
If you look at the game for what it is (a GAME), then it shouldn't be a problem roleplaying any part. There is no real good or evil in a game with 0 rl consequences... so why does it matter if one wants to pretend to be evil for a while?
