Since the name you have on your server during beta is the same name you can transfer to the release version (IF IT IS THE SAME SERVER)
So how do we know which server is which? Which server is the East Coast server?

I think ffxiv is going to be the same as ffxi as in there will be no regional servers. The servers will have people from all time zones and countries. I don't know where the actual servers will be housed though and it would be nice to find that information to help with ping.
I am not 100% sure but I think all the servers will be in Japan. I seem to have read that somewhere. However, SE keeps that stuff very internal.
I do know that all servers will be world wide so choosing one might be down to which your friends play on or heck, even which server name you like best.
is SE actually doing servers by time zone? or even for different regions of the world? I know they never did for FFXI and i'd be sad if they did for XIV as id miss the part of the game of meeting and playing with players from all over the world.

Anyway, as mentioned, don't worry as it seems all servers are global like in FFXI, the way a true MMO should be.
Nope, no time zone servers. They are all open to the whole world. You play with whom ever is on at the time you are on, just like FFXI is.
Aye. Your still get the European or American players playing at your time but as a bonus you get the European/American players that Either stay up pretty late or start playing early.

My first ideal would be the most populated server in the times I play. But I think I also would like the server population to be mostly english speaking since any challenging content would require good communication.
Like FFXI, FFXIV has a built in translator. It's very simple but it's enough I never had a problem in FFXI grouping with Asian players using the feature.
We will see the largest influx of Asian players when the PS3 version is released in 2011.
One of the best linkshells i was in from FFXI (or maybe guilds from any MMO actually) was a mix of players from all around the world (mostly US, Japan, and Singapore, but we had people from i think 14 different countries) many of whom spoke very little english and the translater function would work well enough to get the important things to the group/alliance.
for exp parties communication if more important, as its Zzzz when there is no chatting, but in a good linkshell it was more important to have good players who knew how to do there job and be able to give simple instructions to them.
also you will find players from different regions of the world tend to have differnt stratagies to take on the same task and combining ideas often leads to very effective methods that you would have never tried with a group of all US players, so i wouldnt be that conserned about the most people who speak english as there will be plenty of them on every server

What about server maintenance? Will servers be down for maintenance during "prime time" if you don't live in Japan because of the time difference?
How did it work in FFXI?
Well they are all 3 chocobos, so it's hard to determine. Basically the one with the most popular FF character or place, like Figaro or Sephiroth you can expect to be extremely popular.
Personally if I play I want to avoid the Jp's as much as possible.
Well than you better avoid the game as a whole?
