As the title states, I am going to try out Eve. I have never played Eve before, but I have played too many mmo's to count. So any helpful advice will be greatly appreciated.

Do the tutorials. I can't stress how important that is. The "career" tutorials are also a must. Not only do they teach you the ropes, but you also get useful rewards like ships, skills and even implants.

Do not trust anyone.
First figure what type of profession you want to do first.
Do all the tutoral missions.
When you need help ask in rookie chat, very helpful there.
When finished with the tutorals find a player corp. that will be helpful in your chosen profession.
or join EVE university if you also wish to learn other things.
1. Don't fly anything you can afford to loose.
2. Spend a good amount of your time reading when your flying somewhere safe(r).
3. Decide what you like to do at first. There are lots of careers, you can dabble in many eventually, but will feel noobish longer if you don't start with 1 or 2 focuses.
4. Find a crop that likes to do what you choose in 3.
"Never met a pack of humans that were any different. Look at the idiots that get elected every couple of years. You really consider those guys more mature than us? The only difference between us and them is, when they gank some noobs and take their stuff, the noobs actually die." - Madimorga
Do the tutorials and keep an eye on the rookie help channel.

Right click is your friend. Don't let the "steep learning curve" dissuade you. Always, always read warning messages. If you get one, and then do something and get killed b/c of it, don't complain. Find some friends. As Nizur said, do the tutorial. Do the tutorial slowly and carefully. Play the game with the ingame music on for awhile and enjoy it.
Read the forums. Use EvEMon. Prioritize your character's training. Don't bother doing all the learning skills first, if you don't want to. Learn how to salvage. Learn to read every contract carefully. Read them again. If it's too good to be true, it is.
Learn to use your overview. Filter out what you don't need. Save your changes and name them appropriately. Learn to use Teamspeak or Ventrillo. Hopefully you already do. Always set your mic to push to talk. If you are on an op, keep your trap shut and listen to the FC. If you get killed b/c your FC is an idiot, remember it isn't easy being an FC. Learn from his mistake. Don't be an example of someone that didn't follow instructions and got everyone killed.
That's a good start. Good luck and enjoy your stay.
Oh yea, remember that your choice of race and gender is mostly irrelevant. All characters can train all skills, so it's purely cosmetic. Again, read the lore and pick whatever appeals to you. Just because you pick Minmatar or Gallente doesn't mean you can't train lasers or drones.
Have fun.
