you should try pirates of the burning sea. you can focus on econ even from low lvls. although you may have to sail through a pvp area from time to time. but it is a nice game. and char customization is pretty sweet. no 2 ppl look the same. tons of options

    EVE (spaceships!) Perpetuum (robots!)

EVE is obviously more polished and has more content but it is an old game where a new player might find it quite difficult to carve a niche for himself.

Perpetuum (which I'm trying right now) is EVE but on a planet and with robots. It is surprisingly bug-free and I believe it will grow in content (read complexity of the economy, like resources and stuff to manufacture) once the devs start getting a reliable source of income.. and frm what I see it's already started happening.

Both of these games are ALL about economy. PvP and PvE in them is directly for the purposes of economy because their primary motivators are acquisition of resources to be used in manufacturing.  All the items you use are made by players, except the starting equipment and some total basics that is. So... you choose but I'd prefer Perpetuum if I were you because, as I mentioned, the game still has a fresh playerbase and sky's the limit. In EVE while you might get "competetive" in PvP or PvE I don't think a new player may really compete economically with dinosaurs which started hoarding their wealth and power years and years ago.
