I know you've said you're done with MMOs, but have you tried World War II Online? It's an MMOFPS with a lot of realistic and sim elements.
If you're not familiar with the game it's basically an MMO set during early WWII (the Battle of France to be specific) with a 24/7 persistent world without any instancing. The point of the game is to either take control or ward off Germany's invasion. You can be England, France or Germany. When France is fully occupied (or Germany is wiped off the map) the game is over and they restart the campaign. Each campaign is a few weeks to a couple months.
Personally, the flying in this game is some of the best I've ever played. There are no 'mouses' and it's all flown by joystick. And the competition is quite serious, with a lot of the players flying from Aces High and other flight sims. Here's a video of a player flying unedited (no music, etc).

Ahh a strategy empire builder fan, I love it.
Rome Total War has a permanent home on my HD. And I dont know why, but I liked Tropico 2 the best.
From what I can tell you like the empire building aspect of strategy gaming more than the tactical side of it. But if you ever want to try hard core, nerd stupid, detailed, tactical, planning game, give Combat Missions Barbarossa to Berlin a go I think there is still a great demo out there.
And what no Hearts of Iron, or Silent Hunter
I'll have to check out Scared 2 and Dungeons, havent heard of them.
