I've had loads of fun lately, just resubbed after getting my internet turned back on. Population seems decent, it's by no means dead as the flamers claim it is. Watch out for those sneaky peeps in the grass!
Excellent time to start playing. Just had a big graphic upgrade and there is a tremendous amount of entertaining PvE content to experience. If you like action RPGs and especially the Conan universe, you should have a great time with this game.
The most popular server in EU is Crom and its a PvE server, theres activity in form of Raid PuGs and alot of guilds searching for members all the time so you will be fine on that server

Yes, a new server is coming, BUT its a extreme form of PvP one, so be sure that its what you want. I almost suggest training on another server to prepare for it. It will arrive at earliest in May I guess, and there has been little news about it, but the monthly dev letter arrives in a few days now, that will surely contain some info I guess.
Servers are empty because everybody gave up on Funcom or lost interest . However for a totally new player the game can be entertaining for a month or so , but that's it .
The biggest problem fo a newbie is that you will level up mostly alone because there is nobody in the mid level regions (40 to 70). And when I say "nobody" it is not a figure of speech : it really means ZERO players in the entire area .
I started a fresh character on a different server. I wanted the feeling of starting over.
I would say, find a guild as soon as you can. The low-level zones are empty. Everyone is playing on their 80s. However, people do level alts. And being in a guild helps when you want to talk to others.
It will give me something to do for awhile. I'm really taking my time and not putting in massive hours like I usually do with games.
Take your time and see the sights. Don't expect years of gameplay like EQ or something similar.
I ran through the 40-70 levels on wicanna last night with my level 80 sin. I saw people leveling. I even stopped to help some. The game is beter than it has been in a long time and is worth anyone checking out the PvE content. The god slayer is "end game content" and is a "challenge". It is all based on factions grinding with a token system for rewards, In this post easy world of WoW some may not like having to grind. Thats a fair word to describe the god slayer expansion. But the new dungeons are incredible.
You will find the people who love this game very helpful on wiccana. On a side note my guild just recruited 15 "new players" over the weekend. Who knows how many will stay but there seems to be a positive new interest in a game that deserves a second chance from gamers. One has to learn forgiveness in life. The cool thing is that you can think for your self and try the game for free. Either way ignore the haters and think for yourself. If you enjoy it then great, if not no big deal.
Just downloaded it for the bank holiday weekend, playing on Crom, like the PvE content. Plenty of other low level players around so not sure where people get the idea it's empty (maybe at 4am on a Wednesday morning it is but I don't play then).
It is a little on the simplistic side but then I'm only level 12 so too soon to judge.

In all fairness the game is rather simplistic. It is like a mongo hack n slash. Isn't banging each other over the head in PvP rather simplistic? yet there are those who swear by it. And PvE is mostly killing stuff with some questing and exploration thrown in for good measure. So yea, it is something of a simple game when you boil it down to the bare essentials.
The appreciation and fun are in the details. How it is all presented. The way it is wrapped around the Conan universe and how well it was all done. AoC is a beautiful game to behold.
There are some things that could be done to make AoC deeper. Most who have played the game would agree to that. Crafting could be handled better for one. I think there could be much more variety in the gear; clothing, weapons, and such for the 1-80 game.
I recently resubbed after a lengthy absence and I am really enjoying the game on Crom EU. I made a new character to get back into the swing of things and there was always plenty of others in all levelling areas. Best of all is the fact I haven't crashed once.
There are alwyas plenty of pug raids being set up at all times throughout the day so the endgame population also seems very healthy.
I am also back after a long absence, and am having a great time.
As far as population goes, I can't speak for any server but (NA) Cimmeria, but post-Tortage zones are not empty there.
I'll echo the previous comment - be sure full-loot, free-for-all PvP is what you want before signing up on the new Blood & Glory servers (which are supposed to launch sometime in the summer.) I suspect that many will find it too cut-throat after a little while. But I think AoC is worth playing even without that.

Just logged and there are 4 medium servers if new server starts early March think to whait for it.
