Plus, shouldn't the snow trail behind the guy be more...below the other level of the snow around him?
I'm just guessing that the trail behind him is the same trail used for the footsteps in the snow when regularly walking your character. And, the snowboarding (snowshielding) works probably the same way as AC2's sledding; you could pretty much stop or go whenever and wherever you wanted just as you could running/walking (no lack of friction here probably).

Well... just a guess but it could be one of those easter eggs you always hear about. Also, It reminds me of when someone figured out how to make a dwarf do summersaults in EQ1. Next thing ya know, people were making dwarves just to try it out. No harm in it and if someone enjoys themselves doing that kind of hotdogging thing, then more power to them imo.
