It's a question of how much GPU power you need. If you want to watch full screen videos, or run the "real" Windows 7, you need more GPU power than the integrated graphics that come with Atom offers.
As with many system specs, you want something that is plenty more than enough when you buy it, as you somewhat expect that you'll eventually need better hardware than you need the day you buy the computer. You also don't necessarily know what programs you're going to decide that you want to run in the future.
