I read that there is supposed to be NPC Trade Halls or whatever you can go to in order to become a class or whatever. I know you have to have certain skills or lack of skills, but joining one gets you a bonus and a title. I'm just wondering if there's more information.

Never heard or seen anything like that. There are tutorial NPCs that will give you basic skills in things like resting, mining, taming, and weapon and armorcrafting, but nothing like a class creation NPC or guild.
If you haven't already seen this, Sindas has created an excellent compilation of player guides that can be really helpful, depending on what you're looking for:

Hell hath no fury like an MMORPG player scorned.
im not sure with a trial account, but with an active account you have a max skill cap of 1100, a a common rule its takes around 700 skills to be viable in a chosen proffesion and 1000 to be good at a crafting proffesion. So for example if you make a warrior you are gonig to require at least 700 of you skills invested in combat orientated skills, with around 400 to play with giving you the chance to take archery or taming or riding or some basic survival skills like swimming etc.
But its improtant to know what you want your character to be beofre creating him, the best melee fighters are veelan and thursar/khurite, the best mages are veelan and sheevra, the rest it doesnt matter so much what race you choose and also it isnt impossible for exampel to paly an effective warrior as a pure kallard but certainly harder due to their lower run speed.
the hardest things when starting out in mo are as follows
1. you really need to use the mortal online irc if you plan to buy equipment from players on a regular basis, simply asking in irc if anyone is in your current town selling xxx will certainly speed up your progress.
2. the pick axe does not work in combat, meaning it does hardly any damage use a sword instead and unequip your axe before equiping sowrd or you will duel wield them
3. buy a torch quickly and keep some in your bank, when you see the sun going down go and get one (you can also download a program called gama control that will alow you to paly withotu a torch if you prefer)
4. make some coin chopping abit of wood (get the skilsl from the tutor) or picking up gatherables and sellnig them, enoguh to buy some torches etc.
5. type /h and then type in chat to use the help channel
6. when you kill a creature like a pig, you will get a carcass this needs butchering into usable resource in order to sell it to a vendor, if you cannot find a player to buy your carcass or butcher it for you then simply store it in your bank until you can.
7. duel wielding worn short swords is generally easier to kill things with than with jsut 1 for new players. you can buy them from a utility vendor
8. make note of were the priests are in your area because once you die you will ahve to head there to ressurect.
9. type /guard in chat whilst in a guarded area, you must have your target tab targeted to guard them though, only grey and red palyers can be guarded.
10. check the flag color of a loot bag, if its blue then you will go grey(criminal) for looting it
11. looting mroe than 1 item from a palyers loot bag will cause you to lag out temp for a few seconds, worth noting when in an area with potential pvp.
12. dont be scared to ask new palyers if they are willing to donate a few conis to you, most will liekly oblige, even asking reds outside guardzones if they have soem spare wepons you can have will liekyl get you some free stuff to.
13. never carry more than you are prepared to loose, bank coins often. dont go afk with large maonuts of items on you. even towns arent 100% safe.
there are 2 types of mmo, imitators and innovaters.
Good grief, this strained my google-fu.
I knew there was information roughly fitting what you were describing, spent time combing the Mortal online forums, only to realize the answer was here.
The short aswer is that this is still in the concept stage and will probably not be in game for a while yet. The addition of the sophistication statistic that came in with cooking is one more step toward the NPC guild halls.
Anyway, here's the quote:
There are no classes in the game. I'd better say this first to avoid confusion, as by "classes" most people mean some kind of template you choose from the beginning of the game that also defines your character's options and progress in the game. And no, we don't have anything like that.
What we do have are certain "professions/careers/pursuits" you can choose to pursue in the game. I'd rather not call them classes. Basically, there are NPC Guilds (as in medieval confraternities of workers, i.e. a Tinkers' Guild, or secret societies) you can join if you fulfill their initial requirements. These organisations are not to be confused with player guilds or clans; you can of course be a member of both. Joining an organisation can give you a title and certain benefits, sometimes in the form of special abilities and/or skills. But at the same time you have to give up something, like the option to fully customize your skill-tree to your liking, money or time etc. It's definitely not always the "best" choice. This is a general and very basic description of how this concept will work, as you will have to find and explore these possibilities in the game yourself.

Well done, Osmunda!
Nice info from Rohn and Deathshroud as well.
Once again I think the "confusion" is due to Starvault clearly stating that something existed when it didn't. He repeatedly made statements that these things ARE in the game... when in fact, as Osmunda pointed out they are still in the "concept stage" (2 years later...)
