My first choice would be UO, but I do not believe it's possible. They'd have to sacrifice a lot of what makes UO great for me, in order to do premium graphics.
So my choice would go to something I think is possible, which is AC1.
Pretty much this. Everquest because it was my first and nothing else has given me the same feeling while playing it. Was amazing at the time. And Daoc for the RVR.
I like seeing all the answer for SWG, I'll second that. I just fell in love with the game at the time and simply put, had it all.
Seond choice, would be Anarchy Online. I enjoyed the game so much.. SO much that even though it was buggy as hell and you would login and crash, login and crash alot.. could only play like 10 mins at a time before it blew up on ya.. I kept trying to get back ON..(even when it said servers were down, I'd pretend that it would come on anyways hah).

I would have to go with SWG pre CU/NEG or better yet before the changes during beta where the game was more like Myst with clues built into the game for the path to unlock jedi. At one time just after live launch SOE said they were tracking some 25K things for each toon.
One thing I did not like about SWG was how SOE ended up doing path to unlock jedi after doing about 4 changes to the unlock path.
At first I was going to say EQ, but I think I'm done with class-based gear grinders, even if they captured the magic of EQ with newer graphics.
I'm gonna have to go with UO. I keep bouncing between Uncharted Waters Online, EVE and I even considered giving DF another try but UO2 is what I really want.

Considering all new games are pretty much mixed and matching old game mechanics with new graphics then that means you don't play anything......like me.
Mainly because it had a huge open world (Well, zoned but still huge and could be made nearly seamless now), Many races with their own starting areas, racial factions that made others KoS and made it dangerous, epic quests that were actually quests...meaning LONG chain quests that took quie some time to complete,rare spanws that only popped at certain times, etc, longer leveling that made the game last more than a month, death penalties that made the fights more fun (despite lackluster stand and swing combat. That COULD be altered now) and exciting due to the risk...as well as naked corpse runs and possibility of de-leveling if not too far into your current level. Made to stop and think of strategy in order to be careful.
Sadly though...the one thing it may not get is a decent community like it once had. MMO's have become too mainstream and there for too many douches. However, with most of the above from the original...maybe it would deter such players. Would LOVE to see it happen. Having just 1 MMO cater to the old school again would be nice.
FFXI...all the game was missing was updated graphics (pre level cap raise)...it was SUCH a good/deep game. lol ^^ and before you people start shouting about ffxiv..it's not the same, not yet. they're trying but they're not there yet...
Ditto....FFXIV should have been FFXI-2, or just FFXI-HD with all the proper updates that they could never do because of the PS2 limitations. If you were to delve deep into the lore and look at the mock-ups of how big Vana'diel really is, and all the continents never used, it had such amazing promise.
Sadly, over the past 2 years, and while granted some of the changes with the 76-99 level cap increases have been great, its just no longer the same game as it used to be. Ever since Abyssea was added, there are no epic storylines after Wings of the Goddess, and everything prior has all but become obsolete and pointless now. Sure its still there to do if one were to play proper and avoid Abyssea entirely, but most don't, and its ever more difficult to find help for the events that still require a group, or at least one good job at lvl 90+
Anyway...here's hoping that Yoshi-P eventually turns FFXIV around and its worth playing someday...he's been doing a good job thus far, but its taking too long!
FFXI I loved the art style, so just update the pixels...
Dunno if I can mention SWGEmu but if they ever update the graphics to allow clothing physics ... I will continue to play that even after WOW:TOR is released.

My first instinct is to say UO.
But I have really gone off of fantasy games now.
So I think Pre-nerf SWG would be the best choice.
So this is easy, Ultima Online.
Why? If you have to ask why then you obviously didn't play pre trammel.
5 reasons to start off:
1) Skill based not level based
2) viewable progress for your character along the way
3) Epic PVP battles
4) in world (non instanced) player housing
5) COMPLETE FREEDOM.
