What kind of experience(s) do you get out of/can you get out of TOR? Of course, there's questing and story. These basically are the developer-designed aspects. But there are quasi-player designed aspects, as well -- that is, crafting/player economies, PVP, guilds, player events and so on. These kinds of experiences are forged out of player-to-player interaction. They are still, though, reliant on game design, as their richness correlates to the depth of their underlying systems.
I would like to do crafting and selling in TOR -- figuring out how to make quality items and setting up a client list. I've done some reading on the matter, and it seems this is possible to an exant, due to RE and "critical item crafting" (?). It also seems, however, that this system doesn't allow for much more beyond that, and may be useless when everyone is going for raiding gear. (I've never played SWTOR.)
What kinds of experiences are you getting/want to get out of the game?
How much room are player-to-player experiences given to develop in this game?
How deep do the sandbox-ish systems of this game get?

Hehehe, well you're probably not going to like the answer you get .
SWTOR is strong in the story...as you say the developer designed, aspect of the game. A lot of people really enjoy the storyline and this sells the game for them.
That said, I find SWTOR to be lacking in the "MMORPG" part of the game.
PvP is fairly poor for reasons noted in many other threads.
Combat is "OK." It is not bad, but really doesn't have anything over WoW.
Crafting has a novel system where you send your companions out to do things, so you may enjoy that. As for actually making money off your goods...well it suffers the same problem as WoW where lower level goods are worthless on the AH because everyone grinds them for skill. I'm not sure if max level crafting will have a market or not...that remains to be seen.
Flashpoints are pretty similar to dungeons in WoW. I think the early ones have a large story emphasis, but the later ones do not.
And I've heard there is one Operation (raid) in the game right now, and they will be adding more later. If you're into raiding could be fun, but I'm sure other games offer more on this front.
As for sandbox elements, you get your ship that is kind of like a house, it's entirely instanced though. You can also explore to find "datacrons," it's basically like an Easter Egg hunt.
Basically, I feel like SWTOR is a very good CORPG, but a poor MMORPG. If you want to play an SPRPG that you can play with your friends, then SWTOR fits the bill. If you want to play an MMORPG that creates an open virtual world, then I would look elsewhere.
Are you team Azeroth, team Tyria, or team Jacob?
Not trying to be overly negative but from what you are describing Swtor is not even close to a game you would find entertaining.
You might want to look into EVE online that is exactly what I think you are looking for
