I don't see the cash shop as Pay to Win either. But I still think that the gems for gold trade is a bad idea. There are too many incentives from this alone that will lead to extra (methods of ) gold farming. If the rate at which gold is created increases, while the goldsink prices are fixed, you will see faster inflation on prices for ingame looted items.
- Players that see juicy items in cash shop are going to look for ways to maximize gold gaining to buy gems with. The danger from this is that players always surprise devs with new ideas to farm gold as fast as possible (think 55 monk in GW1). Think about possible counteractions from Arenanet to battle inflation (UW changes, lower droprate of gold etc)
- The gems will be sold in quantities of let's say 100. While all the prices end up in 75, 25 etc. So even players who didnt set out to buy gems for gold, will have left over gems to sell.
- The Auction Hall lets a player place an advertisement. So he can offer gold for gems. This will create a visible demand for gems.
The farming methods that players come up with and place on websites will be popular
I don't know how to fix that either. Taxing gem trade for example (10% of paid gold leaves economy) probably just leads to higher gemprices (ingame gold). Raising other goldsinks (repair, travel, respec) messes too much with the player that tries to ignore the cash shop. Ppl who buy gold with gems won't feel it.
EDIT : As it stands now, characterslots, storage expanders are the services that can be bought with gems too. So not just fluff and weak boosters.

im sure they will patch any exploits out seeing how far gold can go now.

You're assuming that a lot of players would rather farm gold instead of just paying for the cash shop stuff with real money. I sincerely doubt that most people will farm for hours just to get a new character slot. Most will probably just drop $9.99, assuming the prices match the GW1 store.
Besides, gold is a lot more valuable in this game than it is in GW1. Insta traveling, repair, influence, action house, crafting materials, siege blueprints, etc. Gold is not just used to buy minis to tonics.
Of course people will farm gold to trade for gems but I believe that most will not. It's just not worth it. I mean, a few costumes and character/bank slots?

I think that some people are whining about not being selected for the stress test because everyone who pre-purchased GW2 was promised access to all of the Beta Weekend Events. This 6 hour stress test is being run in preparation for the beta events, which will hopefully start next week.

Beta weekends is an event created by Anet. IF they declare that whatever ther doing today is not a beta weekend, then we have no claim to fame. I am 100 percent sure that there are still many a many closed beta tests going on even as we speak. If their getting the game read y for beta weekends why complain.
