yea Tuesday or Wednesday, just because they would want to give you enough time to get the client and eliminate any download issues within that timeframe.

How big is the client expected to be?
I have the client from the recent stress test. The folder is 10 .9g
The way mmo's were: Community, Exploration, Character Development, Conquest.
The way mmo's are now : Cut-Scenes,Cut-Scenes, solo Questing, Cut-Scenes...

I used to work in strategic online marketing for a game company. My vote is Tuesday for several reasons.
You don't want to bother people on Monday when they just returned to work/school and probably have enough email and other stuff to deal with - you will be ignored.
By Tuesday, they've likely gotten their stuff from Monday sorted out - and if this were a promotion for friday, you'd want to give them enough notice. In this case, it involves downloading over 20 gigs so people definitely require a decent amount of advance notice.
So yeah, Tuesday makes the most sense to me

Tuesday. Here's the thing though, the download is only about 11GB and their upload is fast. During the stress test, I downloaded it in about 30 mins. I was honestly surprised.
Ok, now some of you just have nothing better to do.

Holy moly, how fast is your internet? If you really downloaded 11GB in 30 minutes, you've got at least a 50mbit connection, which just makes me feel all sad.
That said, it should hopefully still only take me around 4 hours to get everything at top speed.

I actually heard a few other people say they had super fast downloads too. From what I understand it's Anets servers that are making it so fast or something along those lines.
But we'll find out when we download it

I am pretty sure anything saying 'GW2 Invite' will get opened even if it was sent Monday. *wink*
That said, we rarely send anything important on Mondays for the above reason so I would agree with your Tuesday or possibly even Wednesday.
Have they even gotten the account logins (via the web page) active?
