I won't even be participating in the last BWE (for selfish reasons). I don't want to spoil ANY of the Sylvari and Asura magic for myself and my partner who will be playing as well....feels the same. I hope enough people play to give good test results, and I'm sure they will, but I just can't bring myself to do it this go 'round.
At the point of Head Start....I will roll both my Asura and Sylvari (and Charr) to have them all ready to go.

Yeah, I think based on what he said there, that Asura are going to be a little bigger than we expect in comparison to other races. I can't wait to actually find out.
There were some Asura NPCs in the BWEs on heart quests. They, in comparison to other races, are about the size of gnomes in WoW, actually. I don't think that's bigger than what I expected, but....okay. Other people might have other expectations. If you're talking hit boxes only then....I have no idea since I never FOUGHT with any in the BWEs. That will be interesting to find out.

I don't want to be spoiled on these 2 races as I intended all along to roll both as my first 2 characters but it's VERY tempting to just roll them and take them to other starting zone straight after the tutorial to at least see their race specific stuffs like character creation options, anims etc.

I did forget to mention another reason I insist on at least playing with char creation before release.. names. Yes you can save multiple word names via GW1 and I have, but Asura specifically have huge RP issues with names involving more than 1 word. So single word names are a mad rush to whoever can get them first and if I care about what my toon looks like and take time figuring it out I am now at a disadvantage. So I have used some of my time in BWE figuring out wha I will style my Norn, Charr and Human like but since I most likely will play Asura or Sylvari as my main I really need the opportunity to play with creation to see what I like/dislike.
I'll definitely try out both races. I've yet to decide my race+profession combo, and I seriously hope I can nail that down during next beta weekend. Otherwise I'll be in an infinite reroll loop at release.

I feel ya. Although, my choice way back in 2010 when I first heard of GW2, was immediately Asura Elementalist, cause I'm totally into the midget-like race casting huge fireballs or whatever. But as time went on, all these other professions look pretty tempting to make as my main.
Just remember that each class is very unique from each other with a specific type of playstyle. Pick the one you feel fits your playstyle the most. I mean, people like you and I end up being alt-oholics in the end, with 10 characters and playing whatever we feel like at the moment.
If it comes up on the frontpage of mmorpg.com I check it out. I would be willing to try the game but in all honesty I'm not in any rush to do so. Hopefully shortly after release they have a trial I'd be up for that.
I do wonder if the animations are going to be a little off when attacking Asura as they likely have the same hit-box as every other toon, like Norn especially, so there may be a visual disconnect?

I'll create one of each and play a few levels, just to form an opinion of how they look in game. I don't want to go beyond level 5 with either one though.
I think my first priority for BWE, since we can't count on any additional events of any kind between BWE3 and launch will be to nail down the race/profession combos for my first three characters and get the looks just right, recording the CC settings for each and then confirming, in game, that the characters look the way I want them to in the game world.
Beyond that, I may try to get a better grasp of crafting and I'll probably try to learn where all the PoIs and Waypoints are in Divinity's Reach, so I can do complete exploration of the city asap on head-start day, before heading out into the larger world. I might even do the same for a couple of the other cities.
I also haven't touched much of PvP or WvW so far, so I think those will get most of my remaining time for the event.
