My initial inclination is to save them since you have more ways to make money (crafting, drops, etc.) than karma.

The honest answer is it depends. It depends on how you are planning to proceed through the game.
To break it down:
Every ~5 lvls or so (starting at lvl 10) you can get armor that's better than most of the standard stuff you will find in PvE via the karma vendors in WvW.
If you keep your crafting up to speed (and are vigilant about discovering the better recipes), you can usually craft stuff that's slightly better than the WvW karma gear.
Starting at ~lvl 20 (open world dungeons), you can start doing dungeons. The drops you can get from these are on par with crafted gear.
By lvl 80 all gear is the same (stats-wise), and the only real difference is how they distribute the stats. (some are skewed more heavily into 1 or 2 stats, while others are more even amongst 4 stats)
So basically, it's entirely up to you. Personally I don't save karma all that often unless I'm only a lvl away from my next big bump in gear. Furthermore, if there's certain stuff you can only find from the karma vendors that you reall want, then it makes sense to save up for them (if you don't have enough karma already).
- Bottom line, though. It makes no sense to save all your karma for endgame. There are multiple ways to get gear. Karma is just one of those ways. You got karma, gold, dungeon tokens, glory, WvW tokens. Use them as you see fit.
Since there is no real engame, but just more game at the end, i am not saving anything and buying all the shineys i want. This game is to have fun, fun all the way.

Well, this is kind off a person to person kind of deal. Should I buy every weapon I can buy for karma, or should I save up for the armor I want? I think this is what the OP mean. Not saving it for endgame and then he will be OP. I dont know how much the Karma gain scales through the whole game. If it does not scale alot, it would be smart to save it instead of using it on everything you come over. Myself I will be saving most of it I think, untill I find something that I want.

Also, keep in mind that gear isn't the only useful thing you can buy w/ karma. Some of the vendors also have really nice recipes, food, potions, etc. I know I saw an item that boosted your dmg in PvE by 10% and another that boosted exp from a karma vendor.
