I'm impressed at how the mobs and NPCs interact with you and each other. A couple examples in the 1-15 Human area:
Players defeated a group of bandits attempting to poison the water supply. They all begin retreating as me and another player are chasing one down. The bandit changes directions to go up a rise, away from it's previous direction, and then rolls to further evade our attacks as he jumps down to continue to their hidout. He never made it but it was a nice suprise.
I leave an outpost heading toward a town when I see two guards dead and wolves in the area. I revive one guard and as I switch to the other the guard joins me in reviving the second. I expected him to jet off toward the wolves. Once both were up they continued their path and of course battled the wolves again.
There is also the point of mobs moving out of the way when you cast AoEs but that is smaller in comparison to the others listed above. It was great to see.

I angered the clerk in a clothing shop today. She asked me what size I was and I said actual, because I am not to scale. I like vending machines 'cause snacks are better when they fall. I was doing a 'pickup sledgehammers and bring them to guy collecting them' quest...
... and was shocked as hell when I saw an NPC guard pick up a sledgehammer, beat a monster to death with it, then turn it in to the guy himself.
I wonder what NPCs do with all their karma!
