I think you just need to ignore your level, since they are pretty superficial in GW2 anyway.
What matters is matching your equipment to the zone level range, since you get downleveled anyway. If you are killing a level 20 wolf but you're level 40 with 40 gear.. doesn't matter. Your stats will be downlevelled to that of level 20 (or around that area) anyway. So if you are in a level 20 area with a level 40 character with level 20 gear on, you are good to go.
You can not outlevel content in GW2. I had my ass handed to me today with my level 50 Ranger by a Champion Troll in Queensdale (level 1-15 zone). Outleveling zones will not ruin your style of play, because you can't actually outlevel it.
So.. go farm your mats and only worry about the level shown in green. You might find some higher level items from mobs and chests, but just bank them until you are starting to go into a zone for that level of item and continue to use your crafted items. Using the higher level stuff won't benefit you much anyway unless your effective level (level in green) is the same as them.
I don't suffer from insanity, I enjoy every minute of it.
This is why w e need Trading post working ASAP!! i refuse to migrate to other starting areas for farming and gathering. I would like to keep content fresh and interesting when i roll alts.

You don't need to go to another zone to farm or gather. Nodes become available again after time (seems about 30 mins to me, maybe it's an hour). But, you can also go onto another server or log out and back in to get on a different overflow server and the crafting nodes will all be available again. It's not ideal, but it's a workaround for the moment.

XP from farming mobs to get trophies for crafting is poor, very poor. I farmed about 57 tiny venom sacs and enough jute to create my level 20 light armour set, I was able to craft it at level 18. Jewelery was a bit more difficult, level 21 to get a full set with +condition, if I hadn't been so focused on getting a complete condition set it would have happened sooner.
XP from grinding mobs is the slowest way to level in the game, for a tailor/jeweler in Caledon Forest it really wasn't a problem at all. I focused on the lower level mobs, I was bumped down to level 3, quicker kills, less XP and a good enough drop rate.

Like what? I'm interested to know.
3 or 4 of the escort quests are bugged out. Which means that you can't progress the DE chains. There is a camp that sometimes goes crazy with the respawns making it impossible to take. There was a gathering quest items quest for a chick that just does a loop with no progress. So you get her all the items and then she does a loop and restarts instead of progressing.
That's just from fooling around today. There is probably more I will find as I get deeper into Orr.
