The S.T.A.L.K.E.R., Far Cry, Elder Scrolls or Fallout franchises would all make excellent MMOs if done properly. All would be MMOFPS's with Elder Scrolls being the only fantasy based game in the bunch.
Pokemon, even though I haven't played a pokemon game since silver came out. It is possibly the easiest game to convert to an mmo.
Second choice would be a Dragon's Dogma sandbox, I thought the mechanic of the "boss fight" was dead in todays games reduced to nothing but a button mashing sequence. Then I played Dragon's Dogma and was blown way. Such a combat mechanic in a mmo would be amazing.
Imagine the chaos of players pulling other players out of their rides...people running all over with missile launchers taking on an army of police...or the army...blowing the carp out of the city...
Quest: slap x amount of hoe's = 100 people running around slapping every hoe in sight.

I am going to assume you all know about the new Shadowrun game that is coming out soon. Not an MMO, but you will definately get your fix.

Mass effect. i am playing the multiplayer and loving it. Shadowrun would be a close second.

Darksiders 2 is pretty close in mechanics.
