    Crafting, yes you can level multiple at once.

    Character class, no.

    The cool thing about professions is that you aren't required to make a choice, you simply goto the professions tab (available at lvl 10) and click a profession and setup tasks no choice required you can level them all up if you want :). Its similiar to SWTOR that uses companions do the leg work for you. THey even have a web browser gateway you can use when your not in game.
