Quick question about jobs

I'm a lv20 arcanist atm. When I achieve level 30 I can either level up conjurer to 15 to get the scholar job, or thaumaturge to lv15 to get the summoner job.

What happens if I take both classes to 15? Can I take both jobs?

...and ultimately, is it possible to get every job in the game?

Yes, you have access to all classes and jobs in the game, if you go and level them all up.  That's the great beauty of the armoury system.

You can only use the skills of the sub-classes associated with the job though.

A scholar cannot pick up THM spells and a summoner can't pick up CNJ spells.
