I guess time will tell. So far, I can craft better gear than quest rewards. Its about on par with dungeon drops. If I had to guess I would say its less powerful than raid gear. However, materia crafting and melding looks like it will always be a big business.
Cooking and Alchemy are usually always useful throughout.
Weavers get access to some cool looks which in other mmos has proven to be a reliable income over the long haul. Same with goldsmith to an extent since rings and necklaces are visible on your character.
Keep in mind when housing gets released, crafting profs will pick up a lot of decoration and furniture recipes. Probably see a lot in leatherworking and carpentry.
Fishing...fishing is just its own game. You either like or don't. It provides mats for a few other classes but that about it. The point of fishing in this game is really just to geek out on fishing hah.
Yoshi was a hardcore DAOC player. He has hinted that crafting will play a huge role in RvR pvp efforts. So that reminds me a little of how it was done in DAOC with dedicated crafters supplying RvR battles.
Looking at the amount of resources already put into the crafting and gathering systems, I would be very surprised if they just let it fade out. To me it looks like a solid foundation to build on. Better than Ive seen in a very long time.
I agree it would be a shame to to just let it fade out, not many games focus on what is a viable means to bring players together, dedicated crafters and the sort were the lifeblood in SWG.

Yeah I really hope they keep developing the crafting. I get a very SWGeezy feeling for some reason with this game. The good kind haha
I'm not sure if it compares to the best armor in the game, probably not better than relic armor but I do know that they are supposed to play a big role in the pvp that's coming a few months from now.
