I also like having meaningful goals to work towards that are more long term, coupled with enough short-term gains to stay motivated and driven towards these long term goals.
I don't play end game as it exists in mmo's, I enjoy the journey to get there. Grinding the same 3 dungeons/ raids for better and better gear is the height of boredom for me.
If you consider endgame to be anything that comes after cap then I played the GW1 endgame (both pve and pvp) for a long, long time. I haven't in any other game though.
I don't play end-game either. It's rare that I actually make it to the level cap; usually the game becomes unplayable for me several levels before that when the quests start fading out or it starts taking more than 2 or 3 days to level up. Yuck.
Hypothetically, if I made it to the level cap without being tired of a game, my end game would be collecting. Collecting mounts, pets, or something like that. Or maxing out my crafting.
I want to help design and develop a PvE-focused, solo-friendly, sandpark MMO which combines crafting, monster hunting, and story. So PM me if you are starting one.
My idea of end game would be non stop crafting, maxing out skills and gear, and generally being 'that guy' that you want when you want to hit up a dungeon or get something crafted. A multi tiered AA system and limitless progression would be awesome.

To me there is no such thing as endgame. Because level caps should take an extraordinary amount of time, energy and effort to achieve. And the majority of content that would be labeled endgame should be accessible at a relatively early level. Take for example in Asheron's Call. Level cap is 275 but most endgame (I hate the term) activities such as group quests and farming locations are accessible at level 130+ (easily reachable in a few weeks). In Path of Exile it is near impossible to reach level 100 but endgame activities are accessible at level 65ish. Easily reachable in a week for normal players.
Sandbox means open world, non-linear gaming PERIOD!
Subscription Gaming, especially MMO gaming is a Cash grab bigger then the most P2W cash shop!
Bring Back Exploration and lengthy progression times. RPG's have always been about the Journey not the destination!!!

When a game claims to have an "end-game" I take the hint and stop playing. I am not being cute here, whether they realize it or not they are basically saying it is at this point that it stops being a game and becomes something else (casino, job, whatever ...).
Notice that games like UO and pre-nge galaxies didn't really claim to have an "end-game". Nor does EvE. I don't play those games but the difference should be striking to people. Life leaves you many subtle clues like this.

That's pretty much what I do now it seems. I'd like to have something other than grind gear or do dailies....someone just needs to be a bit more creative than the current devs have been I guess.
Wealth accumulation though crafting and market play, character development through skills, and gear, which all leads to PvP. That's were I see if what I created works.
Where is the none of the above option? I"n not into PvP and I'm not into hamster wheels either. I prefer an alternative such as fine tuning my character via "rep" grind, or better yet, get into world development.. Have it where once you are done with the 1-? level character development, you then take your perfected "Veteran" into stage 2.. Here you increase rep and faction to open up new skills, gear and recipes, while at the same time able to change permanent effect on the game world..
Endgame for me is endless PvP arena with elite armor. Like, when there's literally nothing else to do except PvP because you've finished all the PvE content.

With crafting, or dungeon running. You can play with other people. However, your playing against the game. And, eventually you will see it all (because, the game itself doesn't really have the ability to innovate). With PvP there is at least the potential to always be surprised. If it's good PvP, than no matter how well you think you know it, something will always eventually make you say "...didn't see that coming." or "wtf just happened?" So it has at least the ability to remain interesting through an indefinite number of replays.
Any game whose end game is pvp is probably really shitty PvP. If your PvP doesn't stand up right from the beginning of the game then its almost certainly going to either be fucked up or fuck up the rest of the game.
As others have pointed out, it's all right there in the word. Endgame is the end of the game.
That being said, the way the industry tries to use the term I would describe endgame as the point where you have already played through all the available content at least once, and your only option other than quitting is to endlessly repeat content you have already finished.
