It is because the MMORPG is a mediocre and expensive gaming platform IMO. Not to say it can't be fun but the limitations due to technology leave a lot to be desired compared to single players games.
If you put everything in instances, MMOs can practically be single player games. The only reason it may not beat the best SP games is because devs don't have enough emphasis on instances, and SP game features like stories and scripting.

I don't think that's true at all. My favourite single player RPG is an open world RPG and something which couldn't be replicated when they added online to, based on my beta experience.
In general - cookie cutter, boring after a month or two with little to no innovation.
More specific, many of the people who grew up with MMO's (IE the older crowd lol) and I'm speaking for me, and my circle of friends and old guild mates, simply do not have the time needed to play like we used to. This affects the MMO industry as a whole because if we add that to the younger generation that never experienced real hardcore MMO games and waiting days for spawns and running back to get your "shard" after you died, we get what we have today.
Basically we have games that are watered down, single player solo (or duo) friendly with the biggest problem being the lack of community and ways to build such in almost any game out there. I think of it this way...the golden age of MMO's are long gone, never to return.
If you keep your hopes up that it will or we may see games like we used to play and love, you are fooling yourself. The state of the MMORPG at present is one where they have tried to make a grand single player experience wrapped up into a MMO format. When you build a game with that premise, it just won't work. Unless you give people a vested interest in the world they play in, the towns and cities they visit and the character classes and lore they play with, all you've made is a glorified version of Diablo, hacking and slashing your way until you get your next piece of loot to last you another 3-4 levels.
Will it change? Probably not...I think if anything MMO's will be watered down even more into the FTP genre with microtransactions and people being nickled and dimed to death.
MMOs nowadays are less of an experience and more of a video game. In a sense, they are meant for quick fun, but aren't meant to hook you into a world you enjoy just being in (socially sitting around or actually doing things).
This is all my opinion, obviously.
You say that like it's a bad thing.

The vast majority of MMOs are not bad because they are expensive, they are not bad because of their mechanics, they are bad because of the majority of people playing the games. I find the vast majority of people playing these games to be idiots that I wouldn't piss on if they were on fire. I don't want to play with them, I don't want to inhabit the same space with them, in fact, given the choice between an MMO and a SP game, I'll pick the SP game for both the quality and for the fact that I don't have to hang around with a bunch of immature neanderthals. However, the one thing MMOs have going for them is their range of content. There's a lot more to do in an MMO than there is in a SP game. I can finish a SP game in a couple of days, maybe a week, even playing an hour or so a day. An MMO, even with all of it's faults, lasts at least a couple of months. That's really all it has going for it. I wish it wasn't the case, but society has fallen apart.
MMORPG's have content but majority is sadly quest hub running which I am bored to tears of no matter the IP. But basically the content which I can't stand and the people I barely interact with because it almost seems counter productive to do so.
Mechanically the games are water down. I mean, look at ESO and Skyrim.
I agree to a certain extent. There are some really awful MMOs out there and there are some that are enjoyable, it depends on how they are put together, just like there are some SP games that are great and some that really suck. There are some MMOs that have good stories and are enjoyable as far as the stories go, but when it gets to grinding and all of that, I agree, most MMOs suck in that regard. I'd take a single Skyrim over a million bad MMOs.
If you've played WOW, you've played pretty much every modern MMO.
Little to no innovation, quest running.
And yet this is what people like about wildstar. They run into town, and click through the dialogues of every NPC that has a quest icon, and then run to the various way points on their maps.

When I say WoW has a terrible community, I'm not making it up. -_-

I would like to change that, I really would. I am well aware that it would take a lot of time and effort to make one, but I'm trying my best to make it imaginative, difficult, yet fun. If you say "that's what they all say" and/or still won't believe me, that's fine.
I am a team of one, and I will say that the game that I'm trying desperately to create, won't cater to everyone's tastes. I'm okay with that, since that's not my aim anyway.
Well, what I can say is that, if my don't express my ideas inventively, my game won't work at alll. So, until then, I'll see what I can do.
If I can find the time, I can discuss this with you all you like. It's cool if you don't want to, eheheh.

Little to no innovation, quest running, PVP minigame grinds, PVE gear grinds... same old same old.

They've even been calling this 'fun'.
