There are these wizard battles I've caught a couple of. I'm not sure if they're just random or if there a scripted ladder system where the npc's battle different wizards.
But I saw a pyromancer vs a cryomancer on the beach and a pyromancer vs pyromancer in greenshade.
They port in say a couple words, throw spells at each other until one dies and then the winner summons a portal and ports out. I love that they added stuff like this, like there are wizard challenging each other to duels in secret.
I've also come across a female elf tied up on the ground and when I go to her, I get ambushed by thugs - it's not a quest, it's just a mini event.
There's also the summoners who summon daedric creatures who come out of their portal and then turn the tables on the summoner who couldn't control them and shackle him. If you kill the daedra he's freed and sometimes says something like, "oh thank you, that didn't go as planned."
These on top of the world that changes as you complete quests makes everything feel very alive and interactive.
Yeah, I ran into one of these when I was on the beach exploring. A Summoner opened up a portal when I ran by him, and asked for my help. A couple of demons came out of it and I helped him kill them. So he thanked me and entered the portal. Then the portal closed. I thought, "What the fuck just happened?" But thought it was pretty cool and ran further down the beach. 5 minutes later I was returning back from where I went and passed by that spot again. As I did, I saw a portal open, and the Summoner come rushing out. And he said something like, "I'm sorry, they forced me to do this..." and suddenly a few more demons follow him out of the portal and start attacking me.
As far as I know, not a quest, no story to it. Just one of those really cool things that you find while exploring around in this game.

I was expecting to get an actual quest, or a reward or to even follow him through the portal. But no, just "thanks cya" it was underwhelming in the best way possible. I remember saying "the fuck?" and looking around for a minute before carrying on up the shore. It's little things like this that make a game memorable

There's also the occasional travelling merchant being robbed by bandits that you can save.
And there's the opportunity to extort money from at least one "unmarked" traveling merchant. But I don't know if this is random or something else.
