X-Box 360 Video Recording

What do you X-Box 360 players use to record video? And how?
Is there software outside of the X-Box games that you use? I know I can record my Madden highlights, but that is game-specific.
Also, once recorded, how do you get them to your PC? I have 3 8GB sticks which do not "take" my Madden video files. I have formatted them all, both on my PC and X-Box. Do I "have" to buy a Microsoft specific stick? It would be sweet if I could "see" my X-Box on my home network, but I can not. My X-Box can play videos/music from my PC, but the reverse is not true.
I am not a huge console player, but there are times I am playing a game (other than Madden) and I wish I could record. I also am not a "Live" subscriber. Do I need to be?

Personally the only modern MMORPG trend that annoys me is the idea that MMOs need to be designed in a way to attract people who don't actually like MMOs. Which to me makes about as much sense as someone trying to figure out a way to get vegetarians to eat at their steakhouse.- FARGIN_WAR
