This isn't really meant for "IT SUCKS!" "ITS THE BEST!"
I just want to know if its right for me.
First MMO: Asheron's Call, Morningthaw server...never liked Darktide, thought it was lame...but I did world PvP on an alt in MT. That was a lot of fun. AC was a huge (for the time) world, and the PvE was amazing. I soloed mostly, but so many times I ended up grouping and just had fun...nothing was forced (except on Darktide)...but it was great.
What I didn't like about it, that I didn't mind back then: AH GOD! CHAT SPAM TRADE! *quit*...seeing spam of trade was too lame.
What I hated about it: MACROS...BOTS...AND IT WAS LEGAL IN GAME...this was the biggest turnoff for me, seeing a bunch of macroers and bots.
Second MMO: UO...but I left really quick because people hated the game so much they had programs play for them. Otherwise...
Pros: Huge world, TONS of PVE and PvP (before that PvE thing was introduced)...so many skills and everything. I always enjoyed having pets follow me I had an army of them. Don't think I was meant to have more than one and I had 20 at one time...but it was fun
Third MMO:
SWG...the optimal MMO for me. Huge worlds, SO MUCH PVE...PvP was amazing but optional. Could tame all kinds of things. Housing system and player cities were the best
Con: (before NGE)...nothing too much really I can think of.

Fourth MMO: WoW...pretty much my favorite themepark. Played for years and longer than Asheron's Call and SWG combined, which is quite the victory for me for MMOs.
What I liked: Tons of areas to start in (every race had a custom start location), lots of things to explore, amazing lore...lots of quests and the atmosphere is bar none, the best of any MMO I've played thus far
What I didn't like: Forced raids at endgame...kind of bait and switch. Amazing leveling, and then the only thing to do later was raids or instanced lame battlegrounds.
What I hated: World was very stagnant (even if it had great atmosphere)...battlegrounds did not matter...raids did not matter...
After that...I haven't found any other MMO.
Playing: Heavily modded Skyrim, Mount and Blade Warband, Heavily modded Oblivion, Medieval 2 Total War, Rome (the good first one) total war, Supreme Commander Forged Alliance
Does it sound like ESO is the right MMO for me?

How are your ES games modded? Do you only play them with fox tails and large breasts? Or do you enhance the game in a lore friendly manner to get the most out of your Elder Scrolls games in a truest fashion.
I haven't played mmo's in a good couple years until ESO. Perhaps the biggest reason I stay is because of my love for the franchise as a whole. Seeing the lore and the geography plays a big part for me. I think if you're a big enough ES game ESO will be for you regardless.
The game focuses heavily on small group content, as well as solo. You can solo through most quests, then group up with some randoms or your friends for dungeons/world bosses/dark anchors. It's WvWvW PVP allows you to approach it however you want. 100 man armies, 4 man gank squad, whichever you like.
If these things intrigue you, then ESO may be right for you.
My Skyrim is modded for better looking characters (both male and female)...but I don't focus that much on that part.
Mainly: Economic mods for a living economy, RTS mods to build own city, build my own house+hearthfire house, become emperor and rule skyrim, new lands (I have a whole bunch of new lands)...I have new land mods for every province of Tamriel (some aren't fully finished, but they add over 100+ of game length easily)
I also have mods that make villages more like a village (much bigger and realistic), and cities are gigantic like they should be
Very hardcore gameplay mods (Frostfall, Requiem, super tough dragons, hunger/thirst/sleep), also have mods that combined add over 10,000+ new monsters that fit lore of ES, I also have one that add 1000+ new type of bandits. Much harder AI.
I also have it where Stormcloaks/Imperials/Thalmor attack and raid Skyrim...and Thalmor (and Stormcloaks/Imperials) can attack and take over cities...so the war can be won/lost or the Thalmor can just take over
I also have mods to add Druidism, more realistic Necromancy, realistic guilds, better vampirism, better werewolves and add over 5,000 new spells
I have one that adds over 1,000 new perks in lots of new perk trees
Over 10,000+ new crafting recipes, more realistic smithing, fishing, better alchemy, over 1,000+ new cooking recipes
Fun mods: Predator mod (adds predators/aliens)...and...I have a spaceship one that lets you go to other places in the ES universe...some "fun" races...
Mostly lore friendly stuff though. And no CBBE or that shit...my women look like Helga...burly men looking women of Skyrim

I read all the quest text in WoW.
Does the world have a dynamic feel at all in ESO? That was biggest downside to me in WoW. Nothing the player did really mattered. Kill the big bad boss?...no one even cares. Skyrim I guess sort of has the same problem unless modded, but even vanilla was better a bit.

When you walk past NPCs you might hear them talking about your past exploits. It's pretty cool how they do it. Nothing like omg amazing, but they do seem to care
You wrote a lot but I still did not get enough information help you, or should I say the right information. The game features a system where you will see changes to places on the basis of what you have done. If you like cities going from 'occupied by enemy troops' to 'getting back to normal', that features for example.
ESO playes like a solo game mostly while leveling. It's not as immersive as Skyrim, Morrowind, or Oblivion but it's much more immersive than WoW or most other modern MMOs. I played at launch and then left because the game was pretty much a disaster at that point but I have recently returned and I am very pleased.
It's worth checking out for sure. Just keep in mind it's an MMO so at end game you will not be able to mod which means you will be left with PvP and some short dungeons for the most part. With that said you could always chose to roll another character if that is your thing.
Bait and switch - such an apt description for that horrid game design.
Unfortunately there aren't many MMO which don't employ it. Eve is about the only (major) one that comes to mind, because it's a proper sandbox.
They're not out yet but you might want to keep an eye on games like Everquest Next and depending on how you feel about zombies, h1z1. Archeage is also sandboxier than the average game and should be out sooner.

Holy crap... Morningthaw! I haven't heard that name for years. That was also my first MMO and on that same server (Dieter the swordsman.)
From that I went to DAoC then WOW and many others since...
Hard to say if it's right for you but I've played it since beta and I"m still enjoying it.
It's strengths are the sights and sounds (better than single player ES games, IMHO - looks like a well-modded Skyrim to me), well written quests and story lines, ability system with many of them independent of class, massive persistent PVP zone that is big enough for large zergs, medium scale, small group or even solo PVP... and that it's evolving with many of the best features yet to come (huge PVP "dungeon" in the imperial city accessible only to the side that controls key objectives in Cyrodiil and whoever was already in there when "ownership" of the dungeon flipped... Thieve's Guild and Dark Brotherhood with their own skill lines... justice system with player participation as criminal or vigilante...many more,)
It doesn't have a lot for those whose idea of an MMO is getting to level cap quickly and then raiding (very thin on raid content) or those who prefer PVP in 15 minute bites with scoreboards (no scenario PVP) or "PVP everywhere" (aka "open world PVP") players.
The PVE is very themeparky - but a very good TP at that-- and the PVP is all emergent and player controlled.
