I really enjoyed Monk healing for the short time I played it during MoP. It just played different than the other healing classes, and seemed fairly potent. Of course, I didn't raid with my healer, so that could have all changed by endgame. Not sure how the current incarnation of that class fares.
HATED Pally healing.
Currently at mid levels Paladin healing feels severely underpowered....
Log into the PTR... instant 90, geared... try them out in the 90 raids. You're wasting your time in the low level content, nothing is balanced for leveling, it's only balanced for end game.
Which would ruin most of the game for altoholics like me...
IF you are a altoholic like you said, just do 1 of each class, otherwise you look like someone trying to get the OP class jsut to feel good at playing the game. Don't take this like if i am picking on you because it is not what i am trying to do.
But seriously if you want to know what healer to play that are OP for now but could change with time after the release of WOD. Disc Priest, Resto Druid > Resto shammy > Holy Priest > Holy Pally.
But seriously if you roll a toon currently just base on this or boost 1 then you will be really angry later on becuse each time a xpac comes out, the month prior to release all class changes then once the xpac hits live, inside 1 or 2 months after release they change again.
