Here are a few of my opinions, based on the classes I dabbled in or played alongside quite a bit (realize that development changes could render my opinions obselete in a month, that's the nature of MMOs):
- Rogues are easy to level, deal amazing damage, have a plethora of melee abilities, and can stealth. This is a good class for beginners. Rogues have a solid role in end game instances, except for the elite one. They are awesome in PvP.
- Warriors are easy to level, have a ton of fun and useful melee abilities, and have one of the most crucial end game roles to fill. They are good in PvP.
- Mages are moderately difficult to level, deal the most damage (under most circumstances), and are sought after at later levels. They are good in PvP.
- Paladins (where to start?) are a great solo class and highly versatile up to level 50. After that, they sort of trickle off and become largley boring and useless. A few attractive points: they recieve a free horse while most other classes (save warlocks) have to pay 90 gold, they can heal and fight, and their buffs are very helpful. They are good in PvP in early levels, and decent at later levels while in a group - caught alone at higher levels, however, you're kind of helpless as you will lack a few of the "Holy Grails" of PvP mechanics.
- Druids are easy to level, and are great healers. They can also off-tank.
- Priests are slow to level. They are, however, the most sought after member of a party.
- Shamans are insanely easy to level, have a variety of magic and melee skills, and are awesome in PvP. This is by far the best class in the game if you want to have fun and possess very few exploitable weaknesses.
Priests are only slow to level if you insist on soloing(and even then, they're no worse than anyone else as far as I'm concerned), or are getting stuck in groups of idiots.
As for a starting profession, I would suggest mining, as it's generally the easiest to make money off of, though it can vary from server to server. My friend went Mining/Enchanting, and at 13 already has a couple gold in the bank on Sargeras from selling what he mines at the auction house.
