For what you are doing, the 6800k was the best solution. I think for most of us folks that only run a single game at a time, the 6700k would work just as well and save them a few bucks that they could put towards a FTW edition of their video card.
I can run 3 instances of World of Warcraft without any problem on my rig. And I can still browse and watch youtube or twitch at the same time. I guess the first problem I'd run into if I ever ran more is running out of video memory.
Well 3 wows arent as cpu intensive as one stellaris so I dont know how the comparison works. It was 100 percent the weaker skylake. I can play stellaris, 2 eve onlines, surf the internet, and play heroes of the strom. Where before It would just skip, at 2 eves, and a stellaris.
I doubt the i7 6700k, would of helped, since none of them can use HT, but maybe.

If anything, that Stellaris, which isn't a really exceptional game (I mean graphically and technically) seems to be very badly programmed.
Maybe so, but I don't know of many games that have 100 + ais, and 3000 systems, that doesn't bog down a cpu. Civs wouldn't even work right if you had 100 ais, it would take 100 seconds a turn, even on the fastest computer, so I think its programmed fine. It also works fine, if that is the only game you play with it. Comparably Star ruler 2, works even worse when you have that many ais and systems.
