I'm leaving Eve and was looking for a new good MMORPG. I was tempted by both DAOC and SOR but it seems that DAOC offers the deepest content and gameplay. Unfortunately there a lot of things that got me lost in this game :
1/ Apparently the population is lower in the European zone than US one. I read a post talking about creating an account in the US zone. Are the populations so low in Europe that it is a waste of money to create an account there ? Is creating an account in the US now a mandatory thing given the current populations ?
2/ It seems that Europe is one expansion late but I still read that the most people are playing on "Classic" servers. What does it mean ? Does it mean that the expansions suck and that players stick to the original DAOC or does it mean something else ?
3/ Finally, I'm more a PvE guy than a PvP guy and when it comes to interact with other people my favorite activity is crafting. What expansion/server type will suit my taste the best ?

DAoC is a VERY PvP/RvR oriented MMO then all other games out there, and that's the main focus in this one.
I love this game - but hate the fact that the only sensible way of leveling up is by instancing. You can go to dungeons and stuff and find a group easily, but grinding just takes a heckaload longer. But - if that's only lvl 47 and below. 47, 48 , 49 ,50 you can get in raids and do nothing but kill named big ass mobs and get thier nice drops.
I dunno about the population in Europe, but in America the pop is good.
And to answer your question about classic servers - It only denies access to all things Trial of Atlantis. Since Mythic is one of the few companies that actually listen to their consumer base...So many people hated ToA they just had to make one of these servers, All the other expansions rule. Like many people say..the 14 day trial dosen't do the game justice... Take everyones word for it, this is one of the best games out there atm.
Oh yah....crafting in this game is HUGE you can make everything from dyes, potions, to dying weapons, making weapons, and making armor. I've actually loved crafting since this games release. It's hard enough to keep you interested..but it's easy enough to make some of the best stuff in the game. Be a weapon / Spell crafter.. Make a sexy weapon...then make it have flmaes and a DoT proc.
I'd go with the Classic servers for the simple fact that they're more popular.

As a new player you should really try to play on one of the "standard" servers.
Trials of Atlantis got some really nice content and it was changed to be easier in one of the last patches and they will change some more details in the next 2-3 patches.
Almost any server lost a part of his "population online" because the classic servers just started about 2 weeks ago. It's something new and many want to try it but many will return to their old servers after they realize that there aren't that many differences.
While comparing population numbers you shouldn't forget that there are only one or two timezones covering the European servers while there are many more in the US so there are higher peaks here in Europe compared to the nighttime (for example).
The "one expansion late" problem... Well... There are always about 1-3 months between US patches and their European counterparts. This way players in Europe have to wait some time for new expansions and/or patches but it isn't as bad as it sounds. Sometimes there are bugs or exploits in the the US version after it's released but those are fixed until we get those versions here in Europe. So you'd have to decide "play earlier" or "play with less bugs".
