What do you do with the fish that you catch do they sell for pritty good Gil? Depending on what fish i presume?

Yes, some you can sell for gil, some you can eat for stat bonus, some you can cook to make other foods for stat bonus.
There are also quests that involve fishing. One I can think of off the top of my head has you fish off of a ship that makes rounds between Mhaura and Selbina. When fishing sometimes you will catch a monster like a Sea Crab. The quest has to do with a box that was dropped off the ship on one of its passes and eaten by a crab. You have to fish for a crab, then kill it and get the box.
