I've read the FAQ but I've not seen the answers to these questions.
First off, which server should I pick. I'm in Korea but from England so its gonna be a Euro server (can you choose those from the trial?). Ideally RP but if those servers are devoid of life I'll choose a regular one over them. Classic? or Normal?
Secondly, crafting is a BIG part of the game for me, in SW:G I was an AS,WS,Chef and Tailor. I really enjoy it. Which craft is in the most demand for players? How do I sell my wares? Shops, AH, or just yell?
Thirdly, I'm pretty experienced in MMORPGs and looking for a challenge. How good are Minstrels or Bards? They're my favourite classes by a long way in terms of rp.

If you download the Euro version of the game's trial you'll have access to all of the Euro servers. With the US version you get access to the US servers. You can go HERE to get the Euro version of the trial. There are 4 Euro servers: 2 Normal, 1 PvP and 1 Classic. As far as populations and such go someone who plays on them would have to chime in there...
Most demand would probably be Spellcrafting as it stands right now. Basically anything that gets crafted by any other tradeskill will prolly be brought to an SCer for stat bonuses and such to be applied. As for selling, as any other tradeskill you could just dump your wares on your Consignment Merchant in your House to sell, but as a SCer you're offering more of a service than an actual product so you'd pretty much have to get your name out there and become popular, word of mouth is the best advertising and all that.
Both are good classes, pretty popular, both bring something to a group and are desirable in that department.

I've been a member of DAoC ever since release so i think i can give you a few insights.
Servers... i'm from the US so i don't know much about the Euro server populations. I would take a look at www.camelotherald.com to check the server pops throughout the day so you can get an idea of how many people are on which server and then pick the one with the consistantly highest amount of people.
Crafting... I feel you might be a little dissapointed. DAoC has never really been known for its crafting. THough you might enjoy the grind. I would say the ones that are in the MOST demand are Spellcrafting and Alchmey. While they are neccessary for enhancing your gear, you have to rely on player crafted weapons and armor in order to apply your upgrades. You might want to do a search for Camelot Crafting and check up on a website about the details.
You can buy a house after you get enough money and purchase a Vendor to sell your whares. Players can search the vendors at the housing entrance and if you have what they need, can buy your crap. THis also works well for items you've found in your adventures.
Lastly, bard and Minstrel... they are two VASTLY different classes. Minstrel is more of an off-tank melee with songs and a few insta cast dds. They focus on crowd control. Most everyone would agree to spec 50 in Instruments, leaving the rest to your weapon spec and stealth.
Bards are casters mainly, who also focus on crowd control, speed, and heals. It is difficult to balance your spec w/ this class as you have 3 different lines with speed, cc, heals.
