Are there dedicated european servers? If not, are the US servers located on the east coast or the west coast (or both?).
How many servers are there, and which ones are the most populated ones?
As a european, how should I go about aquiring a copy of the game? (links to european online shops that sell the game would be nice)

No, there are no dedicated servers for any region. There are 32 servers, all regions play on all servers. Populations are pretty balanced, since users don't get to pick their world unless they use a Worldpass (a Worldpass allows you (or whoever you give the Worldpass code to) to create a character in a specific world; it must be bought ingame (with game money) on that world).
There is an EU release of FFXI for the PC out there; I'd just look in your usual outlets for PC software. Online is probably a good bet; just go to any European sites that sell a good selection of PC game software. FFXI for the PS2 was never released in the EU--because of the PS2's regionalization, you'd have to import the right PS2 to go with the software if you decided to import.

yes having no regions for servers is one of the things i really enjoy about ffxi. I can meet people that live all over the us and canada as well as all over europe australia. Oh and dont forget that the largest population of ffxi players is in japan. The cool thing is 90% of the japanese people i meet can speak english its amazing there is a translate function but it could be better.
