G'day, I'm planning on buying FFXI, as I need a timekiller. I was browsning my local gamestore, and found several expansions and likewise, which ones should I buy, or is there some kind of dvd-pack with them all included?
I guess you're talking about PC. The Collectors Edition is on DVD. It has the Base FFXI with RoZ and CoP expansions included. The newest one ToAU just came out a couple months ago. So Collectors Edition + ToAU and you'll be uptodate.

I would actually recommend just getting the Vana'diel Edition if you've never played. Treasures of Aht Urhgan doesn't have a lot to offer a new player, so it would be a good idea to play the game some and see if you like it before laying down the money for the expansion.
