I think all mmorpgs have trading implemented into their designs, in some or other form. Perhaps I would go for the ones where the best items are crafted and not loot based, but it also has limitations.
For example, in WoW the weapon/armor market is very poor because of the loot based and souldbound feature but, on the other hand, you have a nice auction house where you can buy/sell all the other stuff. With trading as objective this would be a bit poor.
In Lineage 2 the crafting has a heavy importance, but it's complex and difficult to get into. Also, most crafting has a % success chance which can be frustating as a crafter if you have bad luck (korean randomize is a nightmare). There is no auction house, so you have to spend a lot of time at Giran looking all the shop stands for good offers. Also, to make items better you can enchant them for a % chance, but it's a moneysink. Most korean mmorpgs are similar to this kind.
In EVE most items are also crafted except the faction loot that, unfortunately, is only lootable from some NPCs who are heavily camped. Instead of AH or verdor stands they have a very nice real market software where you publish your buy/vendor offers. I think it's the most versatile as a trader and there are quite a few skills for this purpose. On the other hand, the crafting of the very good stuff is difficult to reach to because the blueprints (recipes) are very limited in number and already expedited.
As I say at the beginning, every mmorpg has trading in one form or another unless it's completely loot based. But there are always ways to make money without slashing bears or spiders. I hope the short explanation about some of the most famous games gives you a general idea of what to expect.

You can Trade goods from one port to another if you find a nice trade route. This can be NPC Trade Goods or items sold by players. Buy low, sell high.
You can put out Buy Orders and buy a whole bunch of something, then either take it to market or put out a sell order and sell it to whoever wants to buy it.
I have to agree. The EVE market is superb for a businessman. You can be an industrialist, a trader, a broker, a black-market specialist...no doubt other things my imagination isn't giving words to.

Alright, I have to agree with the fact EVE has one of the largest econemy around.
But lets say playing even wasnt an option, what other games could be playable in the same fashion?

There really is no substitute. It's got a fully functional marketplace with everything you could want. Escrow, Stocks, etc.
I mean you could always try something like.. I dunno.. Prison Tycoon... But well, you get the idea.
