I am thinking about starting DaoC...

Heard great things about the game and all and  i was wondering if this is true. Is there like Castles and things in the game and other players can try to take the castles over and the places are all human-controlled and not like computer people or what? thanks for the help

There are two types of RvR (PvP) areas in the game.  The first is called the Frontiers (or NF) and the second are level specifc battlegrounds.  Battlegrounds are much smaller and have no impact on the game outside of having fun.

There are 3 realms.  Each realm has a frontier.  In the frontier there are keeps.  Each keep has 4 towers.  The keeps are guarded by NPC guards of whatever realm owns the keep or tower.  To take the keep/tower you need to kill the Captain.  Once that is done your realm owns it.

Of course there will be PC defenders when you try to take keeps.

You also have siege weapons.  You can knock down walls, level towers to the ground, or bash down doors with rams.  You can claim a keep/tower and upgrade it.  This will make it bigger, it will take more damage, and you will have more/stronger NPC guards.

There are also relics you can capture.  You capture relics by owning certain keeps to open up the relic gates.  You can then attack the relic keep and capture the relic and return it to your realm.  Owning more relics than another side will increase your damage.
