I always enjoy playing Tank/Melee DPS. So usually warrior/monk. I don't normally play hybrids such as paladin / dark knight but on occasion I might end up going melee hybrid.
My Red Mage in FFXI was pretty awesome. I could heal groups as well as do damage as well. Overall it was a great class to play. My Necormancer in Guild Wars is probably my 2nd favorite because he can pretty much do what any group needs.

I've played many MMOs and tried many classes but the above listed ones are the ones that I miss the most and the ones that I always contemplate going back to those old school games for. Well except for the SWG classes
I noticed I listed a couple classes ..BD and Lock that have been considered overpowered through there history. I think I had hit a phaze of playing a healing/buff beoch that I just wanted to kill others and I didn't care if it was a little cheezy Just a thought.
One came to me later : EQ Beastlord was pretty fun for what it was
By far the best class of all is the Druid. It's a rare class to find but a mega-fun class to play.( I will have to say the D&D/ Neverwinter Nights version is the best version of them. ) I personally love to play a healer and do so in every game I can. With a Druid you get the added bonus of a pet to assist. When in nature you can befriend the nearby animals to become allies. The most amazing thing is that a Druid can polymorph and cast in shape to boot.
You can play the game in any form you want caster, healer, even a bit of melee in wild shape what other class can offer so much variety. I love them
PS Warlocks/Demonologists and Bards are great fun too... there's my 123
I can not say that there is any one game's version of class that perfected these classes. The concept of each of these classes is wonderfully interesting in it's play, playability, variety, randomness, versatility, uniqueness, history and fun.
Enchanter from EQ has to be my number 1 followed by EQ's Necro. Even to this day I miss my Enchanter, no other MMO has came close to the fun I had with that class.
Out of the modern MMO's just throw a dart at Vanguards character creation screen. Hard to choose one which stands out head and shoulders above the rest. VG has it's problems but in my opinion it has the best classes out of any MMO except EQ.
Bards were titled "The Jack of all Trades", and rightly so.
They could slow a mob, haste the group, make the group regen mana, all while having 1 mob mezzd in the corner OR having the same mob turned into a pet, helping out with dps.
I played one for about 4 years, including raiding with him <Dioren Deathwynd> and have yet to find a class as resourceful as the bard. Not to mention the leveling through kiting. They could, at one time in the game, have 30 mobs running after them while the bard used AEs to kill every single mob in the train o death. All while spinning around in a tight circle.
Mesmer from Guild Wars. It was something realy cool and innovative as an idea and i had a blast toying with others with interrupts, energy/life and debuffs.
