There may be more in a later expansion but right now you have something like 7 races. Which is okay for launch.
You also have to take into account if such races are force sensitive they will have to morph their faces as well. Not sure how that would work for a wookie or tradoshans.
Launches tend to not have many classes included at launch, expecially when so much money is spent on voice acting, story, worlds, combat, and other such things.

Apparently, it would take too much effort/creativity to make a non-sexy path, so those races don't exist.

No, thats speculation. The only reasons game fail is bugs, horrible mechanics, boring quests and raids, or stuff you've done a millions times before.
The idea of story, the crafting system, the flashpoints...oh heck just go to the location in my sig. If you really want to see why.

jar jar binks was ... an insane addition to the movies, as for ewoks.. less said the better.. some of the races from the films probably wouldnt be missed at all, but... having a wookie companion isnt the same as being able to play as a wookie, i think quite a bit of this stems from the fact that the game revolves pretty much around the jedi, and force powers etc, so any player who has no wish to play as one, i still think that the game needs a 3rd or more even.. faction, bounty hunters and smugglers after all, are neither law abiding nor idealists, neither one belongs in either imperial or rebel factions, maybe as a member of one of the hutt factions or some other criminal organisation... although i do know why they chose only human or near humans as playable races, Star Wars has such a diverse population that the choice itself is far too limiting, and can only be because of the restrictions due to the voiceovers.. though i think that a previous statement about it being because human(oid)s are 'sexier' is also probably not too far from the truth, in that it is also likely a cosmetic restriction.
Bioware made some choices in developing the game that have restricted the races that are easilly set up. Since they went with full voicing, they've pretty much said that races that can't speak 'Basic', can't be played. Unless you'd like something akin to a retcon where all Wookies suddenly speak normally.
Setting up the animations and all the convolutions for creatures is very time consuming, and for each form it requires doing essentially all the same design work over again. So forms that are not bipedal humanoids lose out. It is just a function of development that they've chosen races that allow them to most easilly use all their development time equally.
Perhaps in a further expansion or in a DLC, you may see something stretching these limits. But a fraction of the possible player base wanting an addition that would put them far behind in time to release? Not likely to happen.
If you are holding out for the perfect game, the only game you play will be the waiting one.

While it is true that that there are seven races available at launch, isn't it also true that some professions are race exclusive - so, for example, you can't ever be a Sith Pureblood Jedi?

This being an RPG and its races more than a costume, I agree wholeheartedly with the way BioWare has handled it.

There are still more races that are yet to be revealed.
But they will follow the basic humanoid model (2 legs, 2 arms and 1 head) and will be able to speak basic.
No Wookiees and no Trandoshans.

I can live with having only a few racees to pick from. Having everything working is way more important. Aditional races can be added later.

1 they dont like unfinished polished aliens that dont fit with there story lines .
2 Humanois character are easier for people to identify themself with it .
Just they put it in more political and meaningfull way .
This is my speculation , so take it with a big bag of salt .
1 Companions if made playable could be one of there future ideas for Alien race switiching .
(grand espeda you could switch toon any time you want idea)
This is my gut feeling or instinct , they want to do something else with those droids robots wookie etc .
And converting the Aliens to Companions while allowing to make them playable , is a new twist .
While not having to do all kind of story lines and Voice Over for them .
2 Expansion can promise those , thus making it more profitable by introducing Alien races .
3 That there are already combat animation for most alien races and droids or robots .
Means its just a matter of time before they will let the cat out of the bag .
But again its my speculation .
