SWG (pre-NGE) + BioWare = An awesome and complex game with cracking background and story to match (not to mention a company running it that cares about it's players)
X3:TC + MMO = The most outstanding space sim of all time online.. nuff said.
Personally i can't mix 2 specific games together as they either don't mix well or i just didn't find any really outstanding ones for a long time.

Wow's world, races, lores, spells, classes, and its raids( except they would be open world, no loot), horde vs ally. (No flying mounts, or portal/ teleportation, all continents besides outlands, no global anything, only zone specific such as chat and ah, no auto attack)
Mortal online's first person combat, aiming, everyhting in game crafted, its sieges( therefore its pvp), full loot, only its ground mounts, its mount system, and graphics.
Also, the world would be scaled up to make travel matter more and to allow space for guild to build cities in. Cities would be allowed to be built anywhere besides for a certain distance from one another and from npc hubs. Same factions can conquer each others cities via a challenge that has to be accepted, but enemy faction cities are open game.
Nuetral zones can be conquered by horde/ally for bonuses. Enemy factions can build keeps in hostile zones.. if they can survive.
No instances.. and i know its in neither game, but throw in archages naval aspect aswell.... and islands are capturable....
Oh, and no gnomes.

polish it up and slow down xp so people cant roll and max char in 1 day and its a "game of the year" best mmo pvp game ever!
Why would you want people spending more time PVEing if it's the best PVP game? (The abysmally boring PVE was actually why I gave that game up quick. If PVP was all there was, I would possibly have stayed longer.)
Personally I'd go with:
Planetside+WOW. A PVP-only MMO with MMORPG-style combat in a typical fantasy setting, and a flexible class system that lets players adapt their ability set each respawn to current battlefield conditions. Have a 50-200 population limit per continent for each of 3 factions so that skilled play matters and zerging doesn't. "Vehicles" would exist as well, but would fit the fantasy theme.
Puzzle Pirates + ATITD/H&H. A crafting/economy-only MMO with fun puzzle minigames determining quality of goods. Search the world for the best quality materials, set up camp, and with enough work (and friends) turn it into a bustling village. Like PP, travel would possibly be abstracted into minigames as well, to make it a game rather than a boring hollow chore.

Then forums all over the web would be free of hate and flaming and non-sense arguments over which is the best and/or how one copied another!! There would be peace at last in the mmo universe!!! (laugh)

UO and Rift.
UO skills (with added button mashing abilities), crafting, gathering with Rifts world. MMM that would be some mmo goodness.
I'd probably mix AoC (graphics and lore) and Mortal Online (sandbox game).
Honorable mention, STO and EvE.
